Rucola aduce o nota usor picanta si amaruie care taie din untozimea nautului, iar rezultatul este o pasta racoroasa, perfecta ca aperitiv, ca dip pentru legume sau intinsa pe paine. Prepar humus cel putin de doua ori pe luna, asa ca m-am plictisit destul de repede de <a href=\"https:\/\/gourmandelle.com\/ro\/humus-simplu\/\">reteta clasica de humus<\/a> si am decis sa experimentez cu noi gusturi, texturi si chiar culori. Rucola a devenit destul de repede una dintre ierburile mele preferate si, desi nu este deloc o noutate pentru mine, abia recent am inceput sa experimentez cu gustul ei in retete. Eu folosesc de obicei naut la conserva, asa ca dureaza 5 minute doar pana reteta de humus este gata!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele care fac diferenta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta porneste de la o baza de humus clasic, la care se adauga rucola. Iata la ce sa fii atent cand pui mana pe ingrediente:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nautul din conserva<\/strong> &#8212; scurs si clatit bine sub jet de apa, ca sa scapi de lichidul sarat si de gustul de conserva. Clatitul ajuta si la o pasta mai fina si mai deschisa la culoare.<\/li>\n<li><strong>Rucola proaspata<\/strong> &#8212; alege frunze de un verde viu, fara parti ingalbenite sau ofilite. Cu cat rucola e mai tanara, cu atat e mai dulce; frunzele mature sunt mai picante si mai amarui, deci ajusteaza cantitatea dupa cat de intens iti place gustul.<\/li>\n<li><strong>Tahini<\/strong> &#8212; pasta de susan da humusului cremozitatea si profunzimea aceea caracteristica. Pune toate ingredientele in robot (mai putin boiaua si cateva frunze de rucola, pe care le pastrezi pentru decor) si lasa-l sa lucreze pe viteza maxima pana se formeaza o pasta cremoasa. Nu te grabi: cu cat il lasi sa se invarta mai mult, cu atat humusul iese mai fin si mai catifelat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca pasta iese prea groasa, adauga apa putin cate putin, o lingura pe rand, pana ajunge la consistenta dorita. Acesta este si trucul care face diferenta &#8212; apa subtiaza humusul fara sa-i dilueze gustul, asa cum ar face un plus de ulei. La final, stropeste-l cu ulei de masline si decoreaza-l cu boia dulce si frunzele de rucola pastrate. Il poti intinde si pe o felie de paine prajita la micul dejun sau il poti folosi ca baza intr-un wrap cu legume. Daca iti place sa variezi, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-leurda\/\">humus cu leurda<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-ardei-gras-copt\/\">humus cu ardei gras copt<\/a> &#8212; sunt printre preferatele mele cand vreau o varianta cu o alta nota de gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pastreaza humusul intr-un recipient ermetic, la frigider, unde rezista 3-4 zile. Inainte de servire, lasa-l cateva minute la temperatura camerei si amesteca-l, pentru ca uleiul de masline tinde sa se intareasca la rece. Daca s-a ingrosat in frigider, mai adauga putina apa sau ulei si omogenizeaza. Nu il recomand congelat, pentru ca rucola proaspata isi pierde din culoare si prospetime.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca incerci reteta, mi-ar placea mult sa stiu cum ti-a iesit &#8212; da-i o nota mai jos si lasa-mi un comentariu cu cata rucola ai pus si daca ti-a placut nota ei picanta.
