{"id":85301,"date":"2020-10-16T12:17:45","date_gmt":"2020-10-16T10:17:45","guid":{"rendered":"https:\/\/gourmandelle.com\/?p=85301"},"modified":"2026-06-14T21:33:08","modified_gmt":"2026-06-14T19:33:08","slug":"rulouri-cu-dovlecei","status":"publish","type":"post","link":"https:\/\/gourmandelle.com\/ro\/rulouri-cu-dovlecei\/","title":{"rendered":"Rulouri cu dovlecei"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Rulourile cu dovlecei sunt felii subtiri de dovlecel, taiate cu peelerul, unse cu sos de rosii passata si umplute cu o crema savuroasa din tofu afumat, fulgi de drojdie inactiva, rosii uscate, pasta miso si verdeturi proaspete. Se ruleaza, se aseaza pe un strat de sos si se coc 30 de minute la 200C. Sunt vegane, de post si potrivite ca aperitiv, pranz sau cina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dovleceii se numara printre legumele mele preferate de vara, si am cateva motive bune pentru asta: sunt &#8220;usori&#8221;, sunt deliciosi si sunt extrem de versatili. Imi place sa ii scot din rolul lor obisnuit de garnitura si sa ii transform in ceva care chiar atrage atentia pe masa, iar aceste rulouri fac exact asta. Ideea de baza este similara cu reteta mea de lasagna cu dovlecel, doar ca de data aceasta feliile devin niste rulouri mici, perfecte de servit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru umplutura am tot experimentat pana am ajuns la o combinatie care mi s-a parut pur si simplu minunata: tofu afumat, fulgi de drojdie inactiva, rosii uscate, pasta miso si o multime de verdeturi precum ceapa verde, menta si marar. Reteta a iesit tare buna, asa ca va recomand cu caldura sa o incercati. Dovleceii prea mari au seminte dezvoltate si mai multa apa, ceea ce face feliile sa se rupa la rulat. Taie-i in felii lungi cu peelerul de legume, pe lungime &#8212; vrei felii suficient de subtiri cat sa fie flexibile, dar nu atat de subtiri incat sa se sfasie. Daca observi ca lasa multa apa, le poti lasa cateva minute pe un servetel inainte de a le rula.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> este inima umpluturii si nu il inlocui cu tofu simplu daca vrei acelasi rezultat &#8212; afumarea aduce gustul care imita cel mai bine o umplutura &#8220;cu carne&#8221; sau &#8220;cu branza&#8221;. Cauta un tofu afumat ferm, care se taie usor; cu cat este mai ferm, cu atat tine mai bine umplutura legata in robot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> dau acea nota usor &#8220;branzoasa&#8221; si savuroasa, foarte cautata in bucataria vegana. Sunt diferiti de drojdia de panificatie &#8212; nu dospesc nimic, ci se folosesc strict pentru aroma, asa ca verifica eticheta sa scrie clar &#8220;inactiva&#8221; sau &#8220;nutritional yeast&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile uscate<\/strong> concentreaza dulceata si aciditatea rosiilor intr-o forma intensa, care da culoare si profunzime umpluturii. Taie-le fin inainte de a le pune in robot ca sa se incorporeze uniform. Daca sunt foarte uscate si tari, le poti hidrata cateva minute in apa calda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta miso<\/strong> este secretul gustului de umami sarat din umplutura. O dizolv in apa inainte de a o adauga (4 linguri miso la 4 linguri apa) ca sa se distribuie uniform si sa nu ramana cocoloase. Fiind deja sarata, gusta umplutura inainte sa mai adaugi sare &#8212; de cele mai multe ori miso si tofu afumat sunt suficiente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sosul de rosii passata<\/strong> are doua roluri: un strat subtire pe fundul tavii, ca rulourile sa nu se lipeasca si sa se coaca intr-un mediu umed, si cate putin pe fiecare felie, ca sa lege umplutura. Passata neasezonata e ideala, fiindca o controlezi tu cu piper si verdeturi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Verdeturile proaspete &#8212; ceapa verde, mararul si menta<\/strong> &#8212; sunt cele care dau prospetime si caracter. Menta in special aduce o nota neasteptata care merge surprinzator de bine cu dovleceii. Daca prima si ultima felie ies prea groase sau prea inguste, pastreaza-le pentru altceva.<\/li>\n<li><strong>Daca rulourile nu vor sta in loc<\/strong>, foloseste scobitori pentru a &#8220;securiza&#8221; capetele. Este un truc simplu care salveaza rulourile care tind sa se desfaca, mai ales daca feliile sunt mai scurte.<\/li>\n<li><strong>Nu supraumple feliile.<\/strong> Cam o lingurita de umplutura pe fiecare felie este suficient &#8212; daca pui prea mult, umplutura iese la rulat si rulourile nu se mai inchid frumos.<\/li>\n<li><strong>Stratul de sos de pe fundul tavii nu e optional.<\/strong> El impiedica lipirea si tine rulourile umede in timpul coacerii. Daca sare prea putin sos, marginile rulourilor se pot usca.<\/li>\n<li><strong>Stii ca sunt gata<\/strong> cand dovleceii s-au inmuiat si marginile au inceput sa se rumeneasca usor, dupa cele 30 de minute la 200C. Sosul de rosii le tine umede, asa ca raman bune si reincalzite &#8212; pune-le cateva minute in cuptor la 180C ca sa nu se inmoaie excesiv, cum s-ar intampla la microunde. Umplutura poate fi preparata cu o zi inainte si tinuta la frigider, ceea ce face asamblarea foarte rapida cand ai musafiri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa le pregatesti din timp pentru o ocazie, le poti asambla (rula si aseza in tava peste sos) cu cateva ore inainte, le tii acoperite la frigider si le coci fix inainte de servire. Sunt o alegere buna si pentru <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-pranz-pachet\/\">pranzul la pachet<\/a> sau pentru o masa cu mai multe <a href=\"https:\/\/gourmandelle.com\/ro\/aperitive-festive\/\">aperitive festive<\/a>.
