Lintea rosie fiarta si pasata se combina cu cartof dulce ras, ceapa, patrunjel si fulgi de drojdie inactiva, iar oul (sau psylliumul, pentru varianta vegana) leaga totul intr-o compozitie usor de modelat. Acestea sunt slabiciunile mele culinare! Mereu incerc sa inventez retete noi si originale, sa combin ingrediente si sa ma joc cu aromele. Am facut reteta aceasta de burger acum vreo doua saptamani: folosesc foarte rar cartofii dulci, poate pentru ca sunt cam scumpi la noi, dar prinsesem o oferta si am cumparat cativa. Asa mi-a venit ideea de a-i folosi in chiftelutele pentru burgeri, iar rezultatul a fost exact pe gustul meu.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce ingrediente folosesti si de ce conteaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Baza burgerului sta in cateva ingrediente simple, care lucreaza impreuna. <strong>Lintea rosie<\/strong> se fierbe repede si se paseaza usor, dand acea structura densa, carnoasa. <strong>Cartoful dulce ras<\/strong> aduce dulceata si umiditate, dar tocmai de aceea trebuie sa scurgi foarte bine lintea, ca sa nu iasa compozitia prea moale. <strong>Oul<\/strong> este liantul care tine totul laolalta; daca vrei varianta vegana, il inlocuiesti cu 3 linguri de psyllium hidratat. <strong>Fulgii de drojdie inactiva<\/strong> dau o nota savuroasa, usor branzoasa, iar <strong>patrunjelul<\/strong> si <strong>ceapa<\/strong> aduc prospetime si aroma. Pesmetul fara gluten ajusteaza consistenta: il adaugi treptat pana cand compozitia devine lipicioasa si usor de modelat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De ce iese compozitia care se leaga perfect<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul unei chiftele care nu se desface in tigaie este echilibrul intre umiditate si lianti. Lintea rosie are amidon care, odata pasat, se comporta ca o pasta de legare, iar oul sau psylliumul intaresc aceasta structura. Cartoful dulce ras adauga apa, asa ca daca lintea ramane prea apoasa, compozitia nu se leaga si chiftelele se sfarama. Nu te panica: mai adauga pesmet pana ajungi la consistenta dorita.<\/li>\n\n\n\n<li><strong>Paseaza lintea, dar nu o face piure total.<\/strong> Cateva bucati intregi dau textura si o senzatie mai carnoasa la muscatura.<\/li>\n\n\n\n<li><strong>Nu pune mult ulei in tigaie.<\/strong> Un strat subtire e suficient; prajeste chiftelele 2 minute pe fiecare parte, pana se rumenesc si fac o crusta care le tine forma.<\/li>\n\n\n\n<li><strong>Pentru varianta vegana<\/strong>, lasa psylliumul hidratat sa se ingroase cateva minute inainte sa-l adaugi, ca sa lege la fel de bine ca oul.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa intelegi in profunzime cum sa construiesti orice chiftea vegetariana care nu se sfarama, citeste si <a href=\"https:\/\/gourmandelle.com\/ro\/ghidul-burgerului-vegetarian-perfect-cum-sa-prepari-chiftelute-vegetariene\/\" target=\"_blank\" rel=\"noopener noreferrer\">ghidul burgerului vegetarian perfect<\/a>. Sunt cateva reguli de baza care te ajuta sa experimentezi singur cu ingrediente noi.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce asezi burgerul si cu ce il servesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Eu folosesc chifle fara gluten de la Schar, rosii feliate, frunze de salata sau rucola, castraveti murati si mustar, ketchup sau tahini, dupa pofta. Burgerul merge minunat alaturi de o salata usoara, cum ar fi <a href=\"https:\/\/gourmandelle.com\/ro\/salata-cu-morcovi-baby\/\" target=\"_blank\" rel=\"noopener noreferrer\">salata cu morcovi baby<\/a>, sau, daca vrei ceva cald, langa o <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-cartofi-dulci-ghimbir\/\" target=\"_blank\" rel=\"noopener noreferrer\">supa crema de cartofi dulci cu ghimbir<\/a>. Daca iti place ideea de masa vegetariana satioasa cu linte, arunca un ochi si pe <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegetal-cu-fasole-adzuki\/\" target=\"_blank\" rel=\"noopener noreferrer\">burgerul vegetal cu fasole adzuki<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum pastrezi chiftelele si le pregatesti din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelele prajite se pastreaza la frigider, intr-un recipient inchis, 3-4 zile, si le poti reincalzi rapid in tigaie ca sa-si recapete crusta. Compozitia cruda se modeleaza si se poate congela: pune chiftelele pe o tava, lasa-le sa inghete separat, apoi muta-le intr-o punga. Asa ai mereu la indemana o masa vegetariana rapida.
