Cand am facut chiftelutele mele de linte si sfecla in sos de rosii, am pastrat cateva special ca sa incerc o ciorba de perisoare vegana. Ah, ce bine am facut! Am dat exact peste gustul si textura ciorbei clasice de perisoare cu carne, minus partile mai putin placute. Pentru mine asta a fost momentul in care mi-am dat seama ca nu trebuie sa renunt la mancarurile copilariei ca sa mananc vegan &#8212; trebuie doar sa le regandesc putin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De atunci, compozitia de linte si sfecla a devenit un fel de baza universala in bucataria mea. Am inceput sa o prepar in cantitati mai mari si sa pastrez chiftelute la congelator, ca sa le am la indemana cand vreau o ciorba rapida sau alt fel de mancare. Alege linte rosie decorticata, pentru ca fierbe repede (15 minute sunt suficiente) si se transforma usor in pasta. Foarte important: dupa fierbere o scurgi foarte bine si o procesezi fara sa adaugi apa, altfel compozitia ramane prea moale si chiftelutele nu se leaga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sfecla<\/strong> &#8212; foloseste o sfecla mica, cat un pumn, data pe razatoarea mica. Pe langa culoarea frumoasa, sfecla aduce o dulceata pamantie care echilibreaza aciditatea ciorbei. Razatoarea fina ajuta sa se integreze in compozitie si sa nu lase bucati care sa rupa perisoarele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarate de psyllium<\/strong> &#8212; acesta este liantul vegan care inlocuieste ouale. Psyllium absoarbe lichidul si formeaza un gel care tine chiftelutele compacte. De aceea lasi compozitia sa stea aproximativ 5 minute inainte sa formezi perisoarele &#8212; in acel timp psyllium se hidrateaza si compozitia devine lipicioasa, exact cat trebuie ca sa se modeleze. Daca preferi, poti folosi 2 oua batute, dar atunci reteta nu mai este vegana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina fara gluten Mix Universal Schar<\/strong> &#8212; ajuta la legarea compozitiei. Daca nu tii cont de gluten, merge la fel de bine faina obisnuita. Cantitatea este mica (3 linguri), rolul ei fiind doar de a sustine textura, nu de a domina gustul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otet de la castraveciori murati<\/strong> &#8212; este secretul gustului acrisor. Atentie la cantitate: cele 1-2 cani se folosesc doar daca este vorba de otetul de la castraveciorii murati din comert, care e un pic dulceag. Daca folosesti otet simplu, pune mult mai putin si gusta pe parcurs. Ca alternativa pentru a acri ciorba poti folosi bors sau suc de lamaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Legumele de baza (morcov, pastarnac, telina, ceapa)<\/strong> &#8212; formeaza zeama de legume. Le poti taia cubulete sau da pe razatoare, in functie de cum iti place sa arate ciorba. Pastarnacul si telina aduc acea aroma dulce-aromata specifica ciorbelor romanesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de tomate si rosiile proaspete<\/strong> &#8212; impreuna dau corp si culoare zemei. Rosiile le cureti de coaja si le tai cubulete, iar pasta de tomate adanceste gustul. Le adaugi spre final, ca sa pastreze prospetimea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele si verdeata (cimbru, coriandru, boia, usturoi, leustean)<\/strong> &#8212; cimbrul si boia dau perisoarelor caracterul de &#8220;perisoare cu carne&#8221;, iar pudra de usturoi le aromatizeaza din interior. Leusteanul, frunzele de telina sau patrunjelul se adauga la final, crud, ca sa-si pastreze aroma proaspata.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu adauga apa cand procesezi lintea.<\/strong> Aceasta este greseala numarul unu. Lintea scursa bine si procesata uscat da o pasta densa si lipicioasa care leaga perisoarele; apa in plus le face sa se destrame.<\/li>\n<li><strong>Lasa compozitia sa se odihneasca 5 minute.<\/strong> Stiu ca pare un pas care se poate sari, dar in acest timp tarate de psyllium se hidrateaza si compozitia devine destul de lipicioasa ca sa modelezi chiftelutele care isi tin forma.<\/li>\n<li><strong>Nu fierbe perisoarele &#8212; aburleste-le.<\/strong> Daca le pui direct in zeama fiarta, se desfac. Le aburesti la steamer 20 de minute sau le faci la cuptor la 200C cu un vas de apa alaturi, tot 20 de minute, pe hartie de copt.<\/li>\n<li><strong>Adauga otetul treptat si gusta.<\/strong> Aciditatea e personala. Eu prepar compozitia de linte si sfecla in cantitati mai mari, formez chiftelutele si le bag la congelator &#8212; asa am intotdeauna baza la indemana. Cand vreau ciorba, scot perisoarele si le adaug in zeama calda. Zeama de legume se pastreaza la frigider 3-4 zile intr-un recipient inchis si se incalzeste usor pe aragaz; ideal este sa adaugi perisoarele in farfurie sau in oala abia dupa ce ai oprit focul, ca sa ramana intregi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac ciorbele romanesti reinterpretate vegan, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-burta-vegana-supa-acra-de-ciuperci-pleurotus\/\">ciorba de burta vegana din ciuperci pleurotus<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-radauteana-vegana-de-post\/\">ciorba radauteana vegana de post<\/a>. Iar pentru o zi cu mai multe legume, <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-legume\/\">ciorba de legume<\/a> simpla este mereu o idee buna.<\/p>\n\n\n<div id=\"recipe\"><\/div><div
