Au fost atat de bune incat am facut doua serii, pentru ca primele 12 s-au dus in cateva minute. Coptul fara gluten incepe incetul cu incetul sa imi placa, chiar foarte mult, iar reteta asta a fost una dintre primele care m-au convins ca se poate face baking fara gluten fara compromisuri la textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am descoperit ca tehnica si cantitatile folosite in reteta mea de chec sarat se potrivesc de minune si pentru aceste briose. Practic, am luat baza care imi iesea de fiecare data si am transformat-o in portii individuale, mai usor de impartit si de luat la pachet. Pentru mine, gatitul este terapie, iar zilele in care testez astfel de retete simple sunt cele mai bune.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Aceasta reteta e potrivita daca ai nevoie de<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>O gustare sarata fara gluten pe care o poti lua la pachet la birou sau la scoala<\/li>\n<li>Un aperitiv cald si pufos pentru o masa cu prietenii sau o petrecere<\/li>\n<li>O alternativa fara gluten la painea de la micul dejun, alaturi de o salata sau o supa<\/li>\n<li>O reteta vegetariana satioasa, cu proteine din oua si savoarea ciupercilor sotate<\/li>\n<li>Briose individuale usor de portionat, ideale cand vrei sa nu te incurci cu felii<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Textura pufoasa<\/strong> vine din albusurile batute spuma, care aduc aer in aluat si compenseaza lipsa glutenului.<\/li>\n<li><strong>Se fac foarte usor<\/strong> &#8212; ai nevoie doar de un mixer pentru albusuri si de o tigaie pentru ciuperci, restul e amestecat cu spatula.<\/li>\n<li><strong>Aroma minunata<\/strong> de cimbru, marar si ciuperci sotate face ca briosele sa fie gustoase chiar si reci.<\/li>\n<li><strong>Sunt naturale fara gluten<\/strong>, folosind faina Schar Mix B, deci sunt potrivite pentru cei cu intoleranta sau boala celiaca.<\/li>\n<li><strong>Se gata repede<\/strong> &#8212; 25-30 de minute la cuptor si o tava intreaga de 12 briose e gata.<\/li>\n<li><strong>Sunt versatile<\/strong> &#8212; merg ca aperitiv, gustare sau inlocuitor de paine, calde sau la temperatura camerei.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1807\" src=\"https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888.jpg\" alt=\"reteta briose sarate fara gluten cu ciuperci\" class=\"wp-image-209774\" srcset=\"https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888.jpg 1200w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888-600x904.jpg 600w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888-299x450.jpg 299w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888-680x1024.jpg 680w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888-768x1156.jpg 768w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888-638x960.jpg 638w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888-717x1080.jpg 717w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2014\/10\/DSC8888-797x1200.jpg 797w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Note despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina fara gluten Schar Mix B<\/strong> este un mix special pentru paine si aluaturi dospite, care contine deja amidonuri si agenti de legare ce ajuta aluatul sa nu se faramiteze. Daca nu ai intoleranta la gluten, poti folosi linistit faina de grau. Cand cumperi un mix fara gluten, verifica pe ambalaj sa fie de tip &#8220;B&#8221; sau pentru paine, nu mix universal pentru prajituri, pentru ca structura ceruta de briose este mai apropiata de cea a painii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ouale mari<\/strong> sunt vedeta acestei retete &#8212; albusurile batute spuma dau volum, iar galbenusurile dau bogatie si culoare. Foloseste oua proaspete si lasa-le la temperatura camerei inainte de a le bate, pentru ca albusurile reci nu se monteaza la fel de bine. Greseala clasica este sa nu separi corect albusurile: o urma de galbenus le impiedica sa se bata spuma, deci sparge ouale cu grija.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile<\/strong> se folosesc in doua moduri: 6 taiate marunt si sotate in aluat, plus inca 3 feliate pentru topping. Alege ciuperci ferme, cu palaria inchisa si fara pete umede &#8212; acelea sunt cele mai proaspete. Inainte de a le folosi, sterge-le cu un servet umed in loc sa le speli sub jet de apa, ca sa nu absoarba lichid si sa nu lase prea multa apa la sotat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> intra atat in aluat (100 ml), cat si la sotarea ciupercilor (jumatate de lingura). El inlocuieste untul si tine briosele fragede mai mult timp. Pentru aluat, un ulei de masline cu gust bland merge cel mai bine, ca sa nu acopere aroma de cimbru si ciuperci.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrul si mararul<\/strong> sunt sufletul aromatic al acestor briose. Cimbrul (2 lingurite in aluat plus inca 1 la sotat) se potriveste perfect cu ciupercile, iar mararul (jumatate de legatura, optional dar recomandat) aduce prospetime. Daca folosesti ierburi uscate, foloseste cam o treime din cantitatea ceruta pentru cele proaspete, pentru ca sunt mai concentrate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praful de copt<\/strong> (10 g, un pliculet) este singurul agent de crestere, asa ca nu il sari. Combinat cu albusurile batute, el ajuta briosele sa creasca uniform. Verifica termenul de valabilitate &#8212; praful de copt vechi isi pierde puterea si briosele raman plate.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Bate albusurile spuma tare inainte de orice &#8212; stii ca sunt gata cand poti rasturna bolul fara ca spuma sa curga. Aceasta este cheia texturii pufoase.<\/li>\n<li>Incorporeaza faina si galbenusurile peste spuma cu spatula, cu miscari de jos in sus, nu cu mixerul. Daca amesteci prea energic, scoti aerul din albusuri si briosele ies dese.<\/li>\n<li>Adauga faina putin cate putin, nu toata deodata, ca sa se incorporeze uniform si fara cocoloase.<\/li>\n<li>Lasa ciupercile sotate sa se mai raceasca putin inainte de a le adauga in aluat, ca sa nu topesti spuma de albusuri.<\/li>\n<li>Verifica briosele cu o scobitoare dupa 25 de minute &#8212; daca iese curata, sunt gata. Inainte de servire, le poti incalzi cateva minute in cuptor ca sa redevina pufoase si aromate. Se pot si congela: dupa ce s-au racit complet, pune-le in pungi sau caserole etanse si tine-le pana la o luna, apoi dezgheata-le la temperatura camerei si incalzeste-le usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele sarate fara gluten, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/chec-sarat-fara-gluten-cu-ciuperci\/\">checul sarat fara gluten cu ciuperci<\/a> de la care a pornit aceasta reteta, sau <a href=\"https:\/\/gourmandelle.com\/ro\/chec-fara-gluten-cu-masline-pesto\/\">checul fara gluten cu masline si pesto<\/a>.
