Tofu afumat amestecat cu tofu simplu da o aroma usor afumata, iar umplutura cu ciuperci, ceapa, usturoi si ierburi aromatice o transforma intr-un fel principal generos pentru masa de Craciun sau intr-un aperitiv elegant pentru Revelion. Mie mi-a placut la nebunie, iar Costin a fost si mai incantat! Am petrecut sarbatorile alaturi de doi dintre cei mai buni prieteni ai nostri: am gatit impreuna, ne-am jucat Colonistii din Catan, am baut vin fiert&#8230; a fost super! Si credeti-ma, nu sunt deloc fan iarna, imi displace profund, asa ca daca o reteta reuseste sa ma binedispuna in decembrie, inseamna ca chiar merita. Ma bucur ca in sfarsit mi-am facut putin timp liber sa o postez pe blog.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce ingrediente intra in rulada de tofu cu ciuperci<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul texturii sta in combinatia de <strong>tofu afumat si tofu simplu<\/strong>: cel afumat aduce aroma de &#8220;carne afumata&#8221;, iar cel simplu echilibreaza si pastreaza compozitia ferma. Tofu-ul se marunteste la robot doar pana devine farama, nu pasta, ca sa ramana acea structura compacta dupa coacere. Oul batut si faina (fara gluten, pesmet sau faina normala, la alegere) leaga compozitia astfel incat rulada sa se felieze frumos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Umplutura este partea aromata: ciuperci Champignon taiate marunt, ceapa, usturoi feliat, vin alb, marar si patrunjel proaspat, plus un buchet de condimente &#8212; seminte de coriandru, cimbru, salvie proaspata si stafide aurii pentru o nota dulce-acrisoara. Sosul de uns, din mustar, miere, ulei de masline, galbenus si turmeric, da culoarea aurie si luciul apetisant la final. Intinzi tofu-ul intr-un strat uniform de aproximativ 1,5 cm, lasi o margine libera de 3-4 cm la capete, asezi umplutura deasupra si apoi folosesti folia ca sa rulezi strans, tragand-o usor inapoi pe masura ce inaintezi &#8212; exact ca la un sushi. Folia tine totul compact pana cand albusul si oul din compozitie se coaguleaza la caldura cuptorului si &#8220;sudeaza&#8221; rulada intr-o forma stabila.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Important este sa nu prinzi folia in interiorul ruladei: ea ramane doar pe exterior, ca suport, si se scoate inainte de coacere cand muti rulada in tava. Daca strangi prea lejer, rulada se poate crapa la feliere; daca strangi prea tare, risti sa iasa umplutura pe la capete. Marginea libera lasata la inceput este tocmai ca sa ai loc sa inchizi capetele.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca sa-ti iasa perfect din prima<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Scurge bine tofu-ul<\/strong> inainte sa-l maruntesti &#8212; excesul de apa face compozitia moale si greu de rulat.<\/li><li><strong>Nu transforma tofu-ul in pasta<\/strong> la robot; opre\u0219te-te cand e doar faramitat, ca sa pastrezi textura &#8220;carnoasa&#8221;.<\/li><li><strong>Lasa umplutura de ciuperci sa se raceasca<\/strong> putin inainte sa o asezi pe stratul de tofu, ca sa nu inceapa oul sa se gateasca prematur.<\/li><li><strong>Coace la 190\u00b0C timp de 40 de minute<\/strong> si verifica: rulada e gata cand exteriorul e auriu si ferm la atingere.<\/li><li><strong>Lasa rulada sa se odihneasca<\/strong> cateva minute dupa coacere inainte sa o feliezi &#8212; se va taia mult mai curat.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce o servesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Rulada cere un sos care sa o insoteasca: fie un sos de tip gravy cu vin alb (varianta vegana), fie cu smantana, daca ramai in registru vegetarian. Langa ea merg garniturile clasice de sarbatoare &#8212; piure, legume la cuptor sau o salata proaspata. O poti coace cu o zi inainte, o lasi sa se raceasca complet, apoi o pastrezi acoperita la frigider pana la 3 zile. Inainte de servire o reincalzesti usor in cuptor, acoperita cu folie, ca sa nu se usuce. Feliile reci sunt excelente si a doua zi, intr-un sandvis cu mustar, in stilul unui <a href=\"https:\/\/gourmandelle.com\/ro\/sandvis-vietnamez-cu-tofu-banh-chay\/\">sandvis cu tofu<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut combinatia tofu plus ciuperci, mai ai de explorat pe blog: <a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-rosii-coapte-cu-tofu-afumat\/\">salata de rosii coapte cu tofu afumat<\/a> ca acompaniament usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca incerci rulada asta de Craciun, mi-ar placea tare mult sa-mi spui in comentarii daca a pacalit si omnivorii de la masa ta si cat de afumata ti-a iesit cu tofu-ul folosit &#8212; si nu uita sa lasi
