Se prepara din dovleac copt la cuptor, fiert in piure, combinat cu lapte de cocos, unt vegetal si salvie calita &#8212; rezultatul este un sos catifelat, usor dulce, aromat cu scortisoara si chili.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Inca o zi de toamna, inca o <strong><a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-dovleac-dulci-si-sarate\/\">reteta cu dovleac<\/a><\/strong>! Sunt o mare fana a dovleacului si cred ca nu exista o perioada mai buna decat toamna ca sa te bucuri de el in toate formele &#8212; de la deserturi la sosuri savuroase pentru paste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta reteta a aparut intr-una din acele seri de toamna cand frigiderul era aproape gol, dar aveam un dovleac mare pe blatul din bucatarie. Am copt cubuletele la cuptor, le-am mixat cu niste lapte de cocos si am calit salvia in unt vegetal &#8212; si gata, un sos care arata si miroase ca toamna insasi. Cel mai bun este dovleacul butternut sau dovleacul pl\u0103cintar, care sunt dulci si se coace uniform. Taie cubuletele cat mai egale pentru a se coace in acelasi timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos<\/strong> (2 linguri, topit) se foloseste la coacerea dovleacului. Acoper\u0103 bine cubuletele si ajuta la caramelizarea lor usoara la cuptor, adaugand si o nota subtila de cocos care se combina perfect cu dovleacul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul vegetal<\/strong> (2 linguri) este baza in care se caleste salvia. Alege un unt vegetal de buna calitate, care suporta bine caldura. Poate fi inlocuit cu ulei de masline daca preferi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele de cocos<\/strong> (4 linguri) este cel care face sosul cremos si catifelat. Foloseste lapte de cocos din conserva, nu bautura de cocos din tetrapack &#8212; consistenta este mult mai bogata si mai potrivita pentru un sos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Salvia proaspata<\/strong> este condimentul-cheie al acestui sos. Cateva frunze calite in unt vegetal devin crocante si aromate, parfumand intregul preparat. Nu sari peste acest pas &#8212; salvia este cea care ridica sosul la alt nivel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; scortisoara, nucsoara si fulgii de chili &#8212; se adauga dupa gust, cate un varf de cutit din fiecare. Cand frunzele devin usor crocante si untul capata un miros de nuca, sunt gata.<\/li>\n<li>Blenduieste piureul de dovleac bine, pana devine complet neted, inainte de a-l adauga in tigaie &#8212; un piure cu cocoloase nu se va integra uniform in sos.<\/li>\n<li>Dupa ce adaugi piureul si laptele de cocos, lasa sosul la foc mic cel putin 5 minute &#8212; in acest timp aromele se combina si sosul se leaga.<\/li>\n<li>Potriveste consistenta: daca sosul este prea gros, adauga 1-2 linguri din apa in care ai fiert pastele &#8212; amidonul din ea ajuta la legarea sosului de paste.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Unt vegetal -> ulei de masline:<\/strong> daca nu ai unt vegetal, caleste salvia in 2 linguri de ulei de masline. Aroma va fi usor diferita, dar la fel de buna.<\/li>\n<li><strong>Lapte de cocos -> smantana vegana sau lapte de caju:<\/strong> orice crema vegetala bogata functioneaza ca inlocuitor. Smantana vegana din soia va da un sos si mai dens.<\/li>\n<li><strong>Salvie proaspata -> rozmarin sau cimbru:<\/strong> daca nu gasesti salvie, rosmarinul sau cimbrul proaspat merg de minune cu dovleacul si untul vegetal.<\/li>\n<li><strong>Variatie cu usturoi:<\/strong> adauga 1-2 catei de usturoi zdrobiti impreuna cu salvia la calit pentru un sos mai savuros si mai complex.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul de dovleac se pastreaza foarte bine la frigider intr-un recipient inchis ermetic, pana la <strong>3-4 zile<\/strong>. La reincalzire, adauga o lingura de apa sau lapte de cocos si incalzeste la foc mic, amestecand, pana revine la consistenta cremoasa initiala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru <strong>preparare in avans<\/strong>, poti coace si blendui dovleacul cu o zi inainte si pastra piureul la frigider. In ziua servirii, faci doar pasii cu tigaia &#8212; caleste salvia, adauga piureul si laptele de cocos, si in 10 minute sosul este gata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul se poate <strong>congela<\/strong> pana la 2 luni, portionat in pungi sau recipiente de congelare.
