Se face in aproximativ 30 de minute, e complet vegan si capata savoare datorita fulgilor de drojdie inactiva, care inlocuiesc cascavalul fara sa renunti la gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sunt prima care-si doreste sa guste dintr-un risotto bine facut, iar mie mi se pare ca risotto-ul este una dintre cele mai bune retete inventate vreodata pe pamant. Dovleacul se numara printre ingredientele mele preferate, mai ales in acest sezon: aroma lui este pur si simplu minunata si, atunci cand este copt cum trebuie, poate fi extrem de cremos si bun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sincera sa fiu, prima oara cand am facut aceasta reteta mi s-a parut atat de buna incat m-am apucat sa mananc risotto-ul direct din cratita, cu lingura. Alege un dovleac copt, greu pentru marimea lui si cu coaja ferma, fara pete moi; dovleacul de tip Hokkaido sau butternut are pulpa densa si dulce, perfecta pentru risotto. Il coc separat, uns cu ulei de masline si putina sare, fiindca rumenirea la cuptor concentreaza zaharurile si scoate la iveala aroma aceea minunata pe care nu o obtii daca il fierbi direct in orez.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orez Arborio<\/strong> &#8212; cele 180 g de orez Arborio sunt inima retetei. Acest soi italian cu bob scurt este bogat in amidon, iar amidonul este cel care, eliberat treptat la amestecare, face risotto-ul cremos fara smantana sau cascaval. Nu il clati inainte de gatit: ai spala exact amidonul de care ai nevoie. Daca nu gasesti Arborio, Carnaroli este o alternativa excelenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Supa de legume<\/strong> &#8212; cele 750 ml de supa de legume (sau apa) sunt lichidul care gateste orezul. Tine-o calda intr-un vas alaturat: daca adaugi lichid rece peste orezul fierbinte, intrerupi gatirea si bobul iese inegal. O supa buna, usor sarata, da risotto-ului profunzime de la bun inceput.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si usturoi<\/strong> &#8212; o ceapa medie maruntita si 3 catei de usturoi formeaza baza aromata. Caleste-le in ulei pana devin translucide, nu rumenite: usturoiul ars devine amar si strica tot risotto-ul, asa ca tine focul mediu si nu grabi acest pas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; cele 4-5 linguri de drojdie inactiva sunt secretul gustului bogat, umami, in versiunea vegana. Ii adaug la final, dupa ce iau tigaia de pe foc, ca sa nu se piarda aroma. Cauta fulgi (nu pulbere), de culoare galbena, cu miros placut de aluna; ii poti pastra in borcan inchis, la racoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrisor proaspat<\/strong> &#8212; cateva frunze de cimbrisor proaspat aduc o nota lemnoasa, aromata, care se potriveste perfect cu dulceata dovleacului. Il adaug peste ceapa calita, ca sa-si elibereze uleiurile aromate in grasime; daca ai doar uscat, foloseste mai putin, fiindca este mai concentrat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> &#8212; cele 4 linguri se impart: jumatate pentru copt dovleacul, restul pentru risotto. Asta elibereaza amidonul treptat si da cremozitatea caracteristica; daca torni toata supa odata, orezul fierbe in loc sa devina cremos.<\/li>\n<li><strong>Amesteca des, dar nu continuu.<\/strong> Miscarea frecventa frectioneaza bobul de orez si elibereaza amidonul, dar nu trebuie sa stai lipit de tigaie &#8212; amesteca de fiecare data cand adaugi lichid si din cand in cand intre adaugari.<\/li>\n<li><strong>Stii ca e gata cand orezul este al dente.<\/strong> Bobul trebuie sa fie moale la exterior, dar cu o usoara rezistenta in centru, iar risotto-ul sa curga lenes pe lingura. Gusta inainte sa opresti focul.<\/li>\n<li><strong>Coace dovleacul pana se rumeneste pe margini.<\/strong> Marginile usor caramelizate inseamna ca zaharurile s-au concentrat; adauga dovleacul abia la final, ca sa ramana intregi cubuletele si sa nu se faca pireu.<\/li>\n<li><strong>Pune drojdia inactiva si potriveste de sare la final.<\/strong> Drojdia adauga gust sarat-umami, asa ca gusta inainte sa mai adaugi sare, ca sa nu iasa prea sarat.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Cu cascaval, daca nu il vrei vegan:<\/strong> in caz ca vrei sa folosesti cascaval la acest risotto, iti recomand parmezanul, care se foloseste in mod traditional la aceasta reteta, sau chiar branza de capra. Daca ti-a ramas, pastreaza-l intr-un recipient inchis la frigider pentru 2-3 zile. La reincalzire isi pierde din cremozitate, asa ca adauga putina supa de legume sau apa fierbinte si amesteca pe foc mic pana se inmoaie din nou. Iti poti pregati dovleacul copt cu o zi inainte si il tii la frigider, ca sa asamblezi risotto-ul rapid cand ai chef.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele de acest gen,
