Se prepara dintr-un piure de dovleac fin, lapte de cocos cremos, naut, morcovi si pasta de curry rosie, totul parfumat cu ghimbir proaspat si dres cu putin suc de lime la final. Imi place foarte mult sa prepar acest curry cu dovleac atunci cand am pofta de ceva sanatos si reconfortant pentru saptamana care urmeaza. Mi-am dat seama, de-a lungul timpului, ca preparatele de tip curry fie iti plac la nebunie, fie le urasti de-a dreptul, si trebuie sa recunosc ca nu este o bucatarie prea usoara sau comuna &#8212; uneori e nevoie de ceva mai mult timp ca sa o &#8220;descoperi&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tocmai de aceea sunt de parere ca acest curry cu dovleac este un inceput perfect daca vreti sa descoperiti bucataria indiana. Mie imi place la nebunie, e super delicios, iar reteta este suficient de blanda incat sa nu sperie pe nimeni, dar destul de aromata cat sa te faca sa revii la ea. Poti folosi piure facut in casa din dovleac copt si pasat, sau varianta la conserva. Daca il faci acasa, coace dovleacul taiat in jumatati la cuptor pana se inmoaie complet si lasa-l sa se scurga putin inainte de a-l pasa, ca sa nu fie prea apos. Un piure prea lichid va subtia sosul, asa ca vrei o pasta densa si dulceaga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de cocos<\/strong> &#8212; da cremozitatea si rotunjeste iuteala pastei de curry. Cauta lapte de cocos la conserva cu un continut mare de grasime, nu bautura de cocos diluata de la raft, care e mult prea subtire. Agita bine conserva inainte de a o deschide, ca partea grasa tinde sa se separe si sa se aseze deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Naut<\/strong> &#8212; aduce proteine si textura. Eu folosesc naut fiert la conserva, clatit bine si scurs de zeama, ca sa scapi de gustul de conserva si de excesul de sare. Puteti sa adaugati naut in compozitie, asa cum am facut si eu, sau il puteti lasa deoparte daca preferati un curry mai usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de curry rosie<\/strong> &#8212; da culoarea si profilul aromatic. Calitatea ei face diferenta in farfurie, asa ca alege una buna, cu ingrediente recunoscibile pe eticheta. Cantitatea o reglezi dupa cat de iute o vrei: eu pun de obicei chiar mai mult decat scrie in reteta, dar poti incepe cu mai putin si ajusta la final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbir proaspat<\/strong> &#8212; da prospetimea si nota picanta caracteristica. Da-l pe razatoare fina chiar inainte de a-l adauga si alege radacini ferme, cu coaja neteda; un ghimbir zbarcit a stat prea mult si si-a pierdut din aroma. Cel proaspat dat pe razatoare bate de departe pulberea uscata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovi<\/strong> &#8212; aduc dulceata si o textura placuta. Taie-i felii nu prea groase, ca sa apuce sa se fiarba in cele 15-20 de minute de pe foc. Ei sunt si reperul tau de gatire: cand morcovii sunt fragezi, dar inca au putina structura, curry-ul e gata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Suc de lime<\/strong> &#8212; adaugat la final, taie din grasimea laptelui de cocos si lumineaza toate aromele. Stoarce-l proaspat, peste mancarea deja luata de pe foc, nu in timpul fierberii, ca sa pastrezi prospetimea acrisoara.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Coace pasta de curry inainte de a adauga lichidul.<\/strong> Dupa ce ai calit ceapa si usturoiul, adauga ghimbirul si pasta de curry si las-o 2 minute, amestecand continuu. Acest pas &#8220;trezeste&#8221; uleiurile aromate din pasta si scoate la iveala parfumul condimentelor &#8212; daca sari peste el, curry-ul iese plat la gust.<\/li>\n<li><strong>Foloseste-te de morcovi ca de un cronometru.<\/strong> Acopera tigaia si fierbe la foc mic 15-20 de minute; stii ca e gata cand intepi un morcov cu furculita si intra usor, dar bucata nu se face piure. Asa ramane si dovleacul cremos, fara sa se zdrobeasca tot.<\/li>\n<li><strong>Nu fierbe laptele de cocos clocotit prea tare.<\/strong> Un fierbet linistit, la foc mic, pastreaza sosul cremos; daca da in clocot puternic, grasimea se poate taia si sosul devine granulat.<\/li>\n<li><strong>Pune lime-ul abia la final.<\/strong> Aciditatea adaugata in farfurie, peste mancarea luata de pe foc, echilibreaza dulceata dovleacului si bogatia cocosului. Adauga legumele mai tari odata cu morcovii, iar pe cele moi (cum e broccoli) spre final, ca sa nu se razgateasca.<\/li>\n<li><strong>Mai blanda sau mai iute.<\/strong> Puteti chiar sa nu puneti deloc pasta de curry daca nu tolerati mancarea iute. Mie imi place tare mult si de obicei pun chiar mai mult decat scrie in reteta, asa ca regleaza cantitatea dupa gustul tau.<\/li>\n<li><strong>Fara naut.<\/strong> Daca preferi o varianta mai usoara, lasa nautul deoparte sau inlocuieste-l cu cuburi de tofu adaugate spre final.<\/li>\n<li><strong>Alta baza dulce.<\/strong> In lipsa piureului de dovleac, poti folosi cartof dulce copt si pasat, care da o textura si o dulceata asemanatoare.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Curry-ul cu dovleac se pastreaza foarte bine la frigider, in recipient inchis, 3-4 zile, si chiar castiga in aroma a doua zi, cand condimentele apuca sa se aseze. Il poti pregati cu o zi inainte si doar sa-l incalzesti la foc mic, adaugand putina apa sau lapte de cocos daca s-a ingrosat prea mult. Se congeleaza si el bine pana la 2-3 luni; lasa-l sa se dezghete la frigider peste noapte inainte de a-l reincalzi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Orezul il prepar de obicei proaspat, cat se incalzeste curry-ul. Daca vrei sa duci si mai departe combinatia de cocos si curry, incearca acest <a href=\"https:\/\/gourmandelle.com\/ro\/orez-thailandez-sos-curry-lapte-cocos\/\">orez thailandez cu sos de curry si lapte de cocos<\/a>.
