Mananc paine foarte rar, o data sau de doua ori pe luna, insa cand mi se face pofta, mi se face de o felie crocanta cu putin <a href=\"http:\/\/gourmandelle.com\/ro\/humus-simplu\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>hummus<\/strong><\/a> pe deasupra. Tocmai de aceea iubesc reteta asta: nu cere framantare, nu cere indemanare la cocat si oricine o poate face, chiar daca pana acum nu te-ai apropiat de cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu sunt un mare fan al produselor fara gluten Schar, fiind singurele pe care le folosesc, asa ca aceasta paine a fost creata cu ajutorul mixului <strong>Mix Rustic<\/strong> de la Schar. La painea fara gluten conteaz\u0103 enorm sa folosesti un mix special pentru paine, nu o faina simpla fara gluten: mixurile rustice contin deja amestecul de amidonuri, fibre si agenti de legare care imita rolul glutenului si tin painea legata. Eu folosesc doar Schar tocmai pentru ca rezultatul e constant. Daca schimbi marca, fii pregatit ca textura aluatului si cantitatea de apa sa difere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Drojdia uscata<\/strong> (eu am folosit tot drojdie de la Schar) este cea care da viata painii. Verifica mereu termenul de valabilitate, pentru ca drojdia veche nu mai creste. Semnul ca lucreaza este ca amestecul de apa calduta cu drojdie si zahar incepe sa faca spuma si bule dupa cele 10 minute de odihna. Daca dupa 10 minute nu se intampla nimic, drojdia e moarta si painea nu va dospi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa calduta<\/strong> trebuie sa fie calduta, nu fierbinte. Apa prea fierbinte omoara drojdia, iar apa rece o tine adormita. Ideal e sa fie la temperatura cu care ai face baita unui bebelus: simti caldura, dar nu te frige.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul<\/strong>, doar o jumatate de lingura, nu indulceste painea, ci hraneste drojdia in primele minute si ajuta amestecul sa porneasca mai repede la fermentat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> aduce umiditate aluatului si o aroma fina painii, plus ca ajuta la o coaja frumoasa cand ungi suprafata inainte de cuptor. Foloseste un ulei de masline care iti place la gust, pentru ca se va simti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Semintele de floarea soarelui, in si negrilica (chimen negru)<\/strong> sunt sufletul acestei paini rustice. Rumeneste putin semintele de floarea soarelui in tigaie uscata, fara ulei, doar pana incep sa miroasa a prajit: asta le scoate aroma de nuca si schimba complet gustul painii. Negrilica aduce o nota usor picanta si parfumata, iar inul, pe langa fibre, ajuta la legarea aluatului.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Lasa intai drojdia sa porneasca.<\/strong> Nu turna lichidul peste faina pana nu vezi spuma in amestecul de apa, drojdie si zahar. Acela este testul ca drojdia e vie. Daca sari peste pasul asta, risti o paine compacta.<\/li>\n<li><strong>Nu te speria de aluatul lipicios.<\/strong> La painea fara gluten aluatul iese extrem de lipicios, mai degraba ca o pasta groasa decat ca un aluat clasic. Asa trebuie sa fie. Nu adauga faina ca sa il intaresti, pentru ca painea iese seaca.<\/li>\n<li><strong>Creeaza-i caldura la dospit.<\/strong> Porneste cuptorul pe temperatura minima, lasa usa intredeschisa si aseaza bolul acoperit cu folie langa cuptor. Aluatul are nevoie de un loc cald si fara curent ca sa creasca bine intr-o ora.<\/li>\n<li><strong>Tapeteaza forma corect.<\/strong> Foloseste o forma rotunda de tort de aproximativ 30 cm, tapetata cu hartie de copt si unsa apoi cu putin ulei. Asa painea nu se lipeste si o scoti intreaga.<\/li>\n<li><strong>Verifica coacerea, nu doar ceasul.<\/strong> Painea e gata cand are coaja aurie si crocanta, iar batuta cu degetul pe dedesubt suna a gol. Tine cont ca fiecare mix absoarbe apa diferit, asa ca s-ar putea sa ajustezi putin cantitatea de lichid.<\/li>\n<li><strong>Alte seminte.<\/strong> Amestecul de seminte e flexibil. Pentru ca nu contine conservanti, painile fara gluten se usuca mai repede decat cele cumparate, asa ca daca nu o mananci in cateva zile, cel mai bine o feliezi si o congelezi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Feliaza painea racita complet, aseaza feliile intr-o punga de congelator si scoate cate ai nevoie, direct la prajitor de paine sau la cuptor. Asa ai mereu o felie crocanta la indemana, perfecta pentru o tartina sarata sau pentru micul dejun.
