Se prajesc cate 3 minute pe fiecare parte si au o textura surprinzatoare, asemanatoare cu cea a cascavalului topit pe dinauntru.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sunt de departe cele mai bune chiftelute vegane pe care le-am facut pana acum. Am descoperit de curand un inlocuitor de ou perfect si de atunci il folosesc in toate chiftelutele pe care le pregatesc &#8212; combinatia de faina de tapioca cu fulgi de drojdie inactiva. Pusa peste textura cremoasa a mazarei galbene, da niste chiftelute cu un interior moale, ca de cascaval topit, si o crusta crocanta la exterior.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi puteti multumi pentru reteta mai tarziu, dupa ce o testati&#8230; hehe! chiar daca nu contine niciun produs lactat, combinatia de tofu, fulgi de drojdie si tapioca da un interior moale si elastic care imita senzatia branzei topite.<\/li>\n<li><strong>Crocante pe dinafara<\/strong> &#8212; prajite cate 3 minute pe fiecare parte intr-o tigaie cu putin ulei, capata o crusta aurie si crocanta.<\/li>\n<li><strong>Fara ou, fara compromis<\/strong> &#8212; inlocuitorul de ou (tapioca + drojdie inactiva) leaga compozitia perfect si adauga un gust savuros, asa ca nu ai senzatia ca lipseste ceva.<\/li>\n<li><strong>Ingrediente simple si accesibile<\/strong> &#8212; mazare galbena, tofu, ceapa si cateva condimente pe care le gasesti usor.<\/li>\n<li><strong>Bogate in proteine si fibre<\/strong> &#8212; mazarea galbena uscata e o leguminoasa satioasa, iar impreuna cu tofu rezulta o masa care tine de foame.<\/li>\n<li><strong>Versatile<\/strong> &#8212; este baza retetei si cea care da textura cremoasa. Caut mazare galbena despicata (split peas), care se fierbe mai repede decat cea intreaga. Cand cumperi, alege boabe de culoare uniforma, fara urme de praf sau gauri de gargarite. Nu sari peste pasul de a o pasa bine cu furculita pana devine pasta &#8212; asta e ceea ce tine chiftelutele legate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu<\/strong> &#8212; foloseste 100 g de tofu pasat cu furculita. Pentru reteta asta merge tofu ferm sau semiferm; daca e foarte umed, preseaza-l usor intr-un prosop curat ca sa scoti excesul de apa, altfel compozitia ramane prea moale. Tofu nu aduce mult gust de la sine, dar adauga umiditate si proteine si ajuta la textura moale a interiorului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; aici e secretul. Drojdia inactiva (nutritional yeast) are un gust savuros, usor branzos, care da chiftelutelor nota de &#8220;cascaval&#8221; fara niciun lactat. Cauta fulgi galbeni, nu pudra, si pastreaza-i intr-un borcan inchis, ferit de umezeala. Te avertizez: creeaza dependenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de tapioca<\/strong> &#8212; impreuna cu drojdia inactiva, inlocuieste oul. Tapioca este un amidon care, la caldura, devine usor elastic si lipicios, exact ce ai nevoie ca sa legi compozitia si sa obtii interiorul moale. Nu o confunda cu faina obisnuita &#8212; amidonul de tapioca are aceasta proprietate de legare pe care faina alba nu o are la fel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bicarbonat de sodiu<\/strong> &#8212; jumatate de lingurita pusa in apa de fierbere face mazarea sa fiarba mai repede si sa iasa mai moale. Bicarbonatul ridica usor pH-ul apei, ceea ce ajuta peretii celulari ai leguminoasei sa se inmoaie mai rapid. Nu exagera cu cantitatea, ca altfel poate aparea un gust usor sapunos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa, boia dulce, oregano, patrunjel<\/strong> &#8212; acestea construiesc gustul. Ceapa taiata foarte marunt se va fragezi in timpul prajirii; boiaua si oregano dau caldura si aroma, iar patrunjelul proaspat maruntit aduce prospetime. Susanul presarat in compozitie adauga un mic crocant si o nota de nuca.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Fierbe mazarea pana e cu adevarat moale (aprox. 30-40 de minute cu bicarbonatul adaugat). Daca raman boabe tari, compozitia nu se va pasa uniform si chiftelutele se vor sfarama. Stii ca e gata cand un bob se striveste usor intre degete.<\/li>\n<li>Scurge bine apa inainte de a pasa mazarea. Excesul de lichid e greseala cea mai frecventa &#8212; o compozitie prea uda nu tine forma in tigaie si chiftelutele se desfac.<\/li>\n<li>Lasa compozitia sa se odihneasca cateva minute dupa ce ai amestecat toate ingredientele. Tapioca are timp sa absoarba umezeala si compozitia devine mai usor de modelat.<\/li>\n<li>Unge tigaia cu foarte putin ulei si nu o supraaglomera. Daca pui prea multe chiftelute deodata, scade temperatura si in loc sa se rumeneasca, se inmoaie. Le intorci doar dupa ce s-a format crusta aurie &#8212; daca incerci sa le intorci prea devreme, se lipesc si se rup.<\/li>\n<li>Prajeste la foc mediu, nu la maxim. Rezultatul cu alt amidon va fi putin mai sfaramicios.<\/li>\n<li><strong>Boia dulce<\/strong> &#8212; pentru o versiune mai picanta, inlocuieste o parte cu boia iute sau adauga un varf de cutit de fulgi de chili.<\/li>\n<li><strong>Verdeturi<\/strong> &#8212; patrunjelul poate fi inlocuit cu marar sau cu o combinatie de verdeturi proaspete, dupa ce ai la indemana si dupa gust.<\/li>\n<li><strong>Coacere in loc de prajire<\/strong> &#8212; daca vrei mai putin ulei, poti aseza chiftelutele pe o tava cu hartie de copt, le ungi usor cu ulei si le coci, intorcandu-le la jumatate pana se rumenesc.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelutele se pastreaza la frigider, intr-un recipient inchis, 3-4 zile. Le poti manca reci a doua zi sau le reincalzesti intr-o tigaie ca sa-si recapete crocantul &#8212; microundele tind sa le inmoaie. Pentru preparare in avans, poti fierbe si pasa mazarea cu o zi inainte si tine compozitia gata amestecata la frigider, urmand sa le prajesti proaspete cand ai nevoie. Se preteaza si la congelare: aseaza-le pe o tava sa inghete individual, apoi muta-le intr-o punga, iar la reincalzire le pui direct in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-au placut, mai am si alte retete de chiftelute vegane care merg dupa acelasi principiu: <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-naut-tahini\/\">chiftelute de naut cu tahini<\/a>, <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-amaranth-linte\/\">chiftelute de amaranth cu linte<\/a> sau clasicele <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-naut-falafel\/\">chiftelute de naut falafel<\/a>.
