Modelezi suluri, tai bucatele si le fierbi 1-2 minute, pana se ridica la suprafata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tocmai mi-am descoperit o noua pasiune: facutul pastelor de casa. Nu am crezut niciodata ca poate fi o activitate atat de relaxanta si placuta, iar gnocchi sunt punctul perfect de pornire, pentru ca nu ai nevoie de nicio masina de paste, doar de mainile tale si de o furculita. Abia astept sa imi cumpar o masina de paste si sa incerc si alte tipuri de paste fara gluten, dar pana atunci testez retete simple ca acesti gnocchi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ma enerveaza cand vad retete de gnocchi cu oua, pentru ca mi se par complet inutile. Vei vedea atunci cand prepari reteta ca aluatul se leaga perfect doar de la cartofi, daca alegi tipul corect. Versiunea de mai jos are si leurda maruntita, care le da o culoare verde superba si o aroma fina de usturoi: iti recomand din suflet sa incerci combinatia asta.<\/p>\n\n\n\n<figure class=\"wp-block-paragraph\"><strong>Cartofi albi de marime medie<\/strong> sunt baza retetei, iar tipul lor conteaza mai mult decat orice. Alege cartofi fainosi, nu cei cerosi pentru salate, pentru ca au mai mult amidon si mai putina apa, exact ce iti trebuie ca aluatul sa se lege. Fierbe-i intregi, in coaja, ca sa nu absoarba apa de fierbere: un cartof imbibat cu apa cere mai multa faina si iti da gnocchi tari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina fara gluten<\/strong> folosita aici este MixIt Universal de la Schar, dar merge la fel de bine si Farina. Cauta un amestec universal care contine deja un agent de legare (de obicei guma xantan), pentru ca el inlocuieste elasticitatea pe care ar da-o glutenul. Adauga faina treptat: cantitatea exacta depinde de cat de umezi sunt cartofii tai, asa ca opreste-te cand coca nu se mai lipeste de maini.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Leurda<\/strong> este optionala, dar merita din plin daca o gasesti in sezon, primavara. O dai prin blender pana devine piure si o incorporezi in coca, unde aduce o culoare verde frumoasa si o aroma blanda de usturoi. Daca vrei gnocchi simpli, sari peste ea complet; restul retetei ramane neschimbat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sarea<\/strong> se adauga in apa de fiert, nu in aluat, exact ca la orice paste. Stii ca e gata cand iti ramane moale si elastica, nu tare; cu cat mai putina faina, cu atat mai pufosi ies gnocchi.<\/li>\n<li><strong>Presara faina pe blat si pe maini.<\/strong> Coca de cartofi e lipicioasa, asa ca o suprafata si maini infainate fac modelatul mult mai usor cand rulezi fasiile ca niste carnaciori.<\/li>\n<li><strong>Fa striatiile cu furculita.<\/strong> Apesi usor fiecare bucatica si o rostogolesti pe dintii furculitei. Santuletele nu sunt doar decorative: ele prind mai bine sosul. Striatiile ies foarte frumoase.<\/li>\n<li><strong>Scoate-i de cum se ridica.<\/strong> Gnocchi sunt gata cand plutesc la suprafata apei, destul de repede, in 1-2 minute. Dupa ce i-ai modelat si asezat pe o tava infainata, ii poti tine la frigider cateva ore pana ii fierbi, avand grija sa nu se atinga intre ei, ca sa nu se lipeasca. Pentru pastrare mai lunga, congeleaza-i intai pe tava, raspanditi intr-un singur strat, apoi muta-i intr-o punga; ii arunci direct, congelati, in apa clocotita, fara sa-i dezgheti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cel mai bine sunt fierti proaspat si serviti imediat, scursi bine si alaturi de un sos de paste la alegere.
