La final adaug unt, ulei de masline si optional iaurt grecesc, pentru un gust bogat si o textura cremoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ador supa crema de mazare verde! Prima data cand am preparat-o, am fost captivata de aroma sa intensa, de gustul usor dulceag si de consistenta sa cremoasa. Este genul de supa care arata spectaculos in bol, cu acea culoare verde-vie pe care numai mazarea proaspat congelata o poate da, si care ma face sa ma intorc dupa inca o lingura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am testat reteta in mai multe variante, dar personal prefer varianta lacto-vegetariana, care include unt si smantana. Mazarea congelata este de fapt mai dulce decat cea pe care o gasesti &#8220;proaspata&#8221; in magazin, fiindca este congelata la cateva ore dupa cules, inainte ca zaharurile sa se transforme in amidon. Nu o decongela inainte, adaug-o direct in oala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofi<\/strong> &#8212; doi cartofi curatati si taiati cubulete dau supei corpul si textura cremoasa, fara sa fie nevoie de smantana multa sau de faina. Alege cartofi fainosi, nu cerosi, pentru ca se desfac mai bine la fiert si se paseaza intr-o crema mai uniforma. Taie-i cubulete mici, ca sa fiarba in acelasi timp cu restul legumelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si usturoi<\/strong> &#8212; ceapa taiata in patru fierbe alaturi de legume si dispare complet la pasare, lasand doar o dulceata blanda in fundal. Usturoiul, in schimb, il adaug la final, dupa pasare, ca sa pastreze o aroma vie si proaspata. Daca il fierbi de la inceput, gustul lui se pierde aproape complet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt si ulei de masline<\/strong> &#8212; aceasta combinatie este secretul gustului bogat. Untul aduce rotunjime si o nota cremoasa, iar uleiul de masline adauga fructuozitate. Cu cat untul este de mai buna calitate, cu atat se simte mai mult in farfurie &#8212; aici chiar merita sa folosesti un unt bun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurt grecesc<\/strong> &#8212; optional, dar il recomand cu caldura. Adaugat la final, da supei o usoara aciditate care taie din dulceata mazarii si o face mai echilibrata. Foloseste iaurt gras, de minim 10%, ca sa nu se taie si sa ramana cremos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Piper alb<\/strong> &#8212; am ales special piper alb, nu negru, pentru ca nu lasa puncte inchise in crema verde si pastreaza supa frumoasa la culoare. Asa controlezi mult mai bine consistenta.<\/li>\n<li><strong>Adauga usturoiul si untul dupa pasare, nu inainte.<\/strong> Greseala cea mai frecventa este sa fierbi totul impreuna &#8212; usturoiul fiert isi pierde aroma, iar untul adaugat la cald, peste supa pasata, ramane parfumat si cremos.<\/li>\n<li><strong>Nu fierbe mazarea prea mult.<\/strong> Cele 20 de minute sunt pentru cartofi si ceapa; mazarea are nevoie de mai putin. Un fiert prea lung face culoarea sa vireze spre verde-oliv in loc de verdele acela viu si apetisant.<\/li>\n<li><strong>Stii ca este gata cand<\/strong> cartoful se zdrobeste usor cu furculita, iar crema, dupa pasare, curge lin de pe lingura, fara cocoloase. Daca mai simti bucati, mai paseaza putin.<\/li>\n<li><strong>Guste si potriveste sarea la final.<\/strong> Mazarea si cartofii absorb sarea diferit dupa pasare, asa ca degusta supa abia la sfarsit si ajusteaza cu sare si piper alb.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varianta vegana:<\/strong> inlocuieste untul cu ulei de masline sau unt vegetal, iar iaurtul grecesc cu o lingura de crema vegetala (de caju sau de cocos neutra la gust). Se reincalzeste usor pe foc mic, amestecand din cand in cand; daca s-a ingrosat peste noapte, adauga putina apa sau supa de legume cat sa revina la consistenta dorita. O poti si congela pana la 3 luni &#8212; recomand sa adaugi iaurtul sau smantana abia la servire, dupa decongelare, ca sa ramana cremoasa si sa nu se taie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca esti in cautarea altor retete de supe crema, iti recomand sa incerci si <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-rosii-coapte-cu-branza-feta\/\">supa crema de rosii coapte cu branza feta<\/a>, <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-legume\/\">supa crema de legume<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-broccoli\/\">supa crema de broccoli<\/a>. Pentru zilele in care vrei ceva pe care sa il presari deasupra supei, incearca si reteta mea de <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-bacon-vegan\/\">bacon vegan<\/a>.<\/p>\n\n\n<div
