Se face din ingrediente simple pe care le ai mereu in casa &#8212; morcovi, cartofi, ceapa, oua si gris &#8212; si e gata in mai putin de o ora. E una dintre preparatele mele preferate, iar cu fiecare lingura imi aduc aminte de clipele petrecute la masa, alaturi de cei dragi, cu un bol cald de supa si, uneori, alaturi de un delicios piure de cartofi. De aceea o gatesc si acum exact ca pe vremuri: cu mult patrunjel proaspat si bucati mari de morcov si cartof.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce pui in supa: ingredientele si rolul lor<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are doua parti: zeama de legume si galustile. Pentru zeama folosesti 2 morcovi feliati sau taiati in bucati mari, 2 cartofi cubulete si o ceapa taiata in patru &#8212; ceapa intra intreaga ca sa dea gust, dar o scoti la final ca sa nu o ai in farfurie. Sarea, piperul si patrunjelul proaspat completeaza totul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Galustile se fac din 2 oua, 10 linguri de gris si 2 lingurite de ulei. Albusurile batute spuma sunt cele care dau galustilor textura aerata, asa ca nu sari peste pasul asta. Grisul absoarbe lichidul si se umfla la fierbere, iar uleiul mentine aluatul lejer. Bate-le spuma ferma inainte sa adaugi galbenusurile, apoi incorporeaza grisul treptat, cate o lingura, amestecand bland ca sa nu pierzi aerul din albus. Aerul prins in spuma se dilata la fierbere si umfla galustile &#8212; de aici textura pufoasa, nu compacta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Verifica consistenta aluatului: nu trebuie sa fie nici prea gros, nici prea lichid, ci ca de iaurt. Daca e prea moale, mai pune o lingura de gris si lasa-l sa se odihneasca un minut sa se umfle; daca e prea tare, galustile vor iesi dense. Truc util: scufunda lingura intr-un pahar cu apa rece inainte de fiecare galusca &#8212; aluatul aluneca usor de pe ea si nu se lipeste. O lingura de aluat inseamna o galusca.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De ce se fierb galustile separat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Galustile se fierb intr-o oala cu apa separata, nu direct in supa. Motivul e simplu: grisul elibereaza amidon la fierbere, iar daca le-ai fierbe in zeama de legume, supa s-ar tulbura si si-ar pierde limpezimea. Asa, supa ramane clara, iar galustile le muti la final in zeama.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un detaliu important la fierbere: apa nu trebuie sa clocoteasca tare cand pui galustile. Clocotul puternic le-ar sfasia inainte sa se lege. Cand apa da in clocot, adauga putina apa rece ca sa scada temperatura, apoi acopera oala si lasa galustile sa fiarba domol 8-10 minute la foc mic. Daca vrei sa o transformi intr-un pranz mai consistent, urmeaz-o cu un <a href=\"https:\/\/gourmandelle.com\/ro\/papricas-vegetarian\/\">papricas vegetarian<\/a> sau cu niste <a href=\"https:\/\/gourmandelle.com\/ro\/pierogi-de-post\/\">pierogi de post<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Iar daca esti in cautare de alte supe reconfortante, ai de unde alege: o <a href=\"https:\/\/gourmandelle.com\/ro\/supa-cu-taitei-vegana\/\">supa cu taitei vegana<\/a> la fel de simpla, o <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-morcovi-ghimbir\/\">supa crema de morcovi cu ghimbir<\/a> sau o <a href=\"https:\/\/gourmandelle.com\/ro\/supa-greceasca-cu-lamaie-si-orez\/\">supa greceasca cu lamaie si orez<\/a> pentru ceva mai aromat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o pastrezi si o reincalzesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Supa cu galusti se pastreaza la frigider 2-3 zile, intr-un recipient inchis. Galustile vor absorbi din zeama in timp si se vor inmuia putin, asa ca, daca stii ca o mananci a doua zi, pastreaza galustile separat de supa si combina-le la servire. Reincalzeste totul la foc mic, fara sa lasi supa sa clocoteasca tare, ca galustile sa ramana intregi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa lucrezi din timp, poti fierbe zeama de legume cu o zi inainte si pastra grisul plus ouale pentru aluatul de galusti la momentul servirii &#8212; galustile sunt cele mai bune proaspat fierte. Spune-mi in comentarii cat gris ti-a iesit pentru consistenta perfecta si nu uita sa dai un rating retetei daca ti-au iesit galustile pufoase ca la bunica!<\/p>\n\n\n\n<figure class=\"wp-block-image Ia o lingura de aluat si pune-o usor in apa care clocoteste.
