Sunt vegane, simple si gata in mai putin de o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ciupercile Portobello umplute sunt preferatele mele! Le gatesc atunci cand vreau ceva care arata impresionant pe farfurie, dar care imi cere de fapt foarte putin efort. Umplutura se face din ce scot oricum din ciuperca &#8212; coditele &#8212; asa ca nimic nu se iroseste, iar palaria mare si carnoasa face toata treaba grea: tine umplutura, se rumeneste frumos si are acea textura robusta care imi aminteste de un fel de mancare cu carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru mine, aceasta reteta este mai mult o baza decat o reteta fixa. Pornesc de la umplutura asta clasica de ceapa, usturoi si verdeturi, dar de fiecare data ma gandesc la altceva ce as putea adauga. umplutura se face chiar din coditele ciupercilor, asa ca folosesti toata ciuperca, nu doar palaria.<\/li>\n<li><strong>Textura carnoasa<\/strong> &#8212; ciuperca Portobello are o textura densa, robusta, care satisface chiar si pe cei care nu sunt obisnuiti cu mancarea vegetariana.<\/li>\n<li><strong>Putine ingrediente<\/strong> &#8212; ceapa, usturoi, ardei rosu, verdeturi si cateva condimente; toate se gasesc usor.<\/li>\n<li><strong>Naturala vegana si fara gluten<\/strong> &#8212; nu trebuie sa inlocuiesti nimic ca sa o faci potrivita pentru aceste diete.<\/li>\n<li><strong>Foarte adaptabila<\/strong> &#8212; inima retetei. Cauta palarii mari, ferme, cu marginea inca usor curbata in jos; cand marginea s-a deschis complet si lamelele de dedesubt sunt foarte inchise la culoare si umede, ciuperca este deja trecuta. Curata-le cu o perie sau cu un servet umed in loc sa le speli sub jet de apa &#8212; ciupercile absorb apa ca un burete, iar umiditatea in plus le impiedica sa se rumeneasca si le face fade. Coditele nu se arunca: le scoti, le toci marunt si devin baza umpluturii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si usturoi<\/strong> &#8212; baza aromatica a oricarei umpluturi bune. Cei 6 catei de usturoi pisati par multi, dar la cuptor aroma se domoleste si se rotunjeste. Caleste ceapa pana devine translucida inainte de a o folosi, ca sa nu ramana cruda si iute in umplutura finala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardei gras rosu<\/strong> &#8212; aduce dulceata si culoare. O parte intra in umplutura taiat cubulete, iar din rest tai fasii subtiri cu care decorezi ciupercile inainte de coacere. Alege un ardei ferm, lucios, fara pete moi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Marar si patrunjel<\/strong> &#8212; cate o legatura din fiecare. Verdeturile se adauga la final, dupa ce ai oprit focul, ca sa-si pastreze prospetimea si aroma vie. Daca le calesti, isi pierd culoarea verde aprinsa si gustul devine plat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coriandru macinat si cimbru<\/strong> &#8212; jumatate de lingurita de coriandru si doua lingurite de cimbru dau profilul de aroma. Cimbrul merge perfect cu ciupercile, iar coriandrul macinat adauga o nota calda, usor citrica. Adauga-le in tigaie odata cu ceapa si usturoiul, ca sa se desfaca in ulei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> &#8212; doua linguri pentru calirea umpluturii si putin in plus pentru a unge tava. Daca esti lacto-vegetarian si preferi, poti folosi unt in locul uleiului pentru o aroma mai bogata. Pentru o varianta complet vegana, ramai la uleiul de masline.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Acopera tava cu folie de aluminiu.<\/strong> Acesta este pasul care face diferenta: folia tine aburul inauntru, asa ca ciupercile devin zemoase si nu se usuca la cuptor. Fara ea, risti sa scoti niste ciuperci uscate si zbarcite.<\/li>\n<li><strong>Nu spala ciupercile sub jet de apa.<\/strong> Absorb apa si devin apoase. Sterge-le doar cu un servet umed sau cu o perie moale.<\/li>\n<li><strong>Caleste umplutura doar 5 minute.<\/strong> Vrei sa inmoi ceapa si usturoiul si sa scoti aroma condimentelor, nu sa gatesti totul complet &#8212; restul gatitului se intampla la cuptor.<\/li>\n<li><strong>Adauga verdeturile dupa ce ai oprit focul.<\/strong> Caldura reziduala e suficienta; asa raman verzi si aromate.<\/li>\n<li><strong>Stii ca sunt gata<\/strong> cand palaria s-a inmuiat, a lasat putin suc in tava si umplutura s-a rumenit usor la suprafata. Pentru o varianta vegana, ramai la uleiul de masline.<\/li>\n<li><strong>Joaca-te cu verdeturile si condimentele<\/strong> &#8212; in loc de marar si patrunjel poti folosi busuioc sau oregano, iar pentru o nota mai picanta adauga putin fulgi de ardei iute in umplutura.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Umplutura se poate pregati cu o zi inainte: caleste-o, las-o sa se raceasca complet si tine-o la frigider intr-un recipient inchis. In ziua mesei nu mai ai decat sa umpli ciupercile si sa le bagi la cuptor. Ciupercile coapte se pastreaza 2-3 zile la frigider, intr-un recipient etans, si se reincalzesc cel mai bine in cuptor, la foc mic, sub folie, ca sa nu se usuce. Nu recomand congelarea, pentru ca ciupercile lasa multa apa la decongelare si textura sufera.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa stapanesti tehnica de baza inainte de a te apuca, am scris un ghid despre <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-gatesti-ciupercile\/\">cum sa gatesti ciupercile<\/a> ca sa-ti iasa de fiecare data. Iar daca ti-au placut ciupercile umplute, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/vinete-umplute-cu-ciuperci-orez\/\">vinetele umplute cu ciuperci si orez<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/rulouri-cu-ciuperci\/\">rulourile cu ciuperci<\/a> &#8212; toate pornesc de la aceeasi idee simpla de legume umplute la cuptor.<\/p>\n\n\n<div
