Este versiunea fara carne a clasicului papricas, la fel de consistenta si aromata, dar mai usoara. M-am inspirat din amintirile placute legate de versiunea pe baza de carne a bunicii mele si m-am pornit pe drumul de a recrea acest fel de mancare indragit intr-un format complet vegetarian.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Papricasul traditional contine de obicei carne &#8212; pui, vitel sau porc &#8212; gatita intr-un sos bogat, parfumat cu ceapa, usturoi si, bineinteles, boia de ardei. Eu am pastrat exact acel sos catifelat si rosu, dar am lasat ardeiul capia, morcovul si galustele sa duca greutatea farfuriei. Cauta o boia cu o culoare rosie vie, nu maronie: culoarea inchisa tradeaza o boia veche, care si-a pierdut aroma. Pastreaz-o intr-un borcan inchis, ferit de lumina, fiindca se decoloreaza repede. Cea mai frecventa greseala este sa adaugi boia direct in uleiul foarte incins &#8212; arde in cateva secunde si devine amara. Eu o adaug odata cu rosiile, cand temperatura mai scade.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeiul capia<\/strong> &#8212; da dulceata si miezul carnos al tocanei. Alege ardei grei pentru marimea lor, cu pielita lucioasa si fara pete moi. Cu cat sunt mai copti si mai rosii, cu atat sosul iese mai dulce si mai aromat. Eu ii tai cubulete potrivite, ca sa ramana intregi dupa fierbere si sa nu se transforme in pasta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; formeaza baza aromata a sosului. Taie-o cat mai marunt si soteaz-o linistit 2-3 minute, pana devine sticloasa si incepe sa miroasa dulceag. Daca o lasi sa se arda, va da o nota amara intregului preparat, asa ca tine focul mediu si nu te grabi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile in conserva (cubulete)<\/strong> &#8212; aduc aciditatea care echilibreaza dulceata ardeiului si a boielei. O conserva buna de rosii intregi sau cubulete iti da un sos mai constant decat rosiile proaspete din afara sezonului. Verifica eticheta sa nu contina zahar sau alti aditivi &#8212; ideal sunt doar rosii si suc de rosii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ouale (pentru galuste)<\/strong> &#8212; dau structura si pufoseala galustelor. Foloseste oua proaspete, la temperatura camerei, fiindca albusurile reci se bat mai greu spuma. Separa-le cu grija: chiar si o urma de galbenus in albus impiedica spuma sa se ridice bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de grau<\/strong> &#8212; joaca doua roluri aici: leaga aluatul de galuste si ingroasa sosul. Pentru galuste, adaug-o treptat si opreste-te cand compozitia are consistenta unei smantani mai groase. Pentru sos, dizolva faina in apa rece (intai faina, apoi apa, amestecand) ca sa eviti cocoloasele.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Bate bine albusurile inainte de galbenusuri.<\/strong> Aerul prins in albusuri este ce face galustele pufoase. Stii ca spuma e gata cand ramane in bol intoarsa cu gura in jos fara sa curga.<\/li>\n<li><strong>Verifica consistenta aluatului de galuste.<\/strong> Trebuie sa fie cu putin mai gros decat smantana. Daca e prea subtire, mai adauga o lingura de faina; daca e prea tare, galustele ies dense, nu aerate.<\/li>\n<li><strong>Foloseste paharul cu apa rece pentru lingura.<\/strong> Inmoi lingura in apa rece intre galuste &#8212; asa compozitia aluneca usor si galustele ies regulate, fara sa se lipeasca de metal.<\/li>\n<li><strong>Nu arde boiaua.<\/strong> Cea mai mare greseala la papricas. Restul retetei ramane neschimbat.<\/li>\n<li><strong>Mai picant sau mai bland:<\/strong> regleaza raportul dintre boiaua dulce si cea iute. Pentru un papricas mai bland, scoate de tot boiaua iute; pentru unul mai aprins, mai adauga jumatate de lingurita.<\/li>\n<li><strong>Legume in plus:<\/strong> poti adauga felii de cartof sau ciuperci impreuna cu morcovul, pentru o tocana si mai consistenta. Lasa-le un pic mai mult la fiert ca sa se inmoaie.<\/li>\n<li><strong>Fara galuste:<\/strong> daca nu ai timp, serveste papricasul cu paste fierte, orez sau o felie groasa de paine de casa pentru sos.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Papricasul se pastreaza foarte bine la frigider 3-4 zile, intr-un recipient cu capac. De fapt, gustul se rotunjeste a doua zi, dupa ce aromele de boia si rosii au timp sa se imbine. Reincalzeste-l usor pe foc mic, cu un strop de apa daca sosul s-a ingrosat prea tare. Galustele se pot pastra separat de sos daca vrei sa ramana ferme.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul de papricas (fara galuste) se congeleaza bine pana la 2-3 luni; galustele insa isi schimba textura la congelare, asa ca le prefer facute proaspete. Daca pregatesti din timp, poti soti legumele cu o zi inainte si sa adaugi rosiile si boiaua chiar inainte de servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac mancarurile de acest gen, arunca o privire si peste alte <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-mancare-de-post\/\">retete de mancare de post<\/a> de pe blog, peste colectia de <a href=\"https:\/\/gourmandelle.com\/ro\/retete-picante\/\">retete picante<\/a> daca preferi gustul mai aprins, sau peste <a href=\"https:\/\/gourmandelle.com\/ro\/tocanita-irlandeza-de-post-vegetariana\/\">tocanita irlandeza de post vegetariana<\/a> pentru inca o tocana consistenta fara carne.<\/p>\n\n\n\n<figure
