Este reteta vegana pe care o gatesc cel mai des in sezonul rece: satioasa, aromata si gata in mai putin de 45 de minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ciorbele de legume mi se par cele mai usoare retete din lume! Tai niste legume, le arunci intr-o zeama si gata ciorba! Pe cat e de simpla, pe atat e de aromata, iar verziturile proaspete ii dau un gust si mai bun. Pentru mine, asta e ciorba de baza pe care o pun pe foc cand vreau ceva cald, curat la gust si fara batai de cap.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Singura mea regula la aceasta reteta tine de condimente: eu am folosit vegeta sanatoasa facuta in casa. Va recomand si voua sa va preparati singuri mixurile de condimente si sa evitati sa mai folositi prostii cu monoglutamat de sodiu, sare in exces si alte chimicale. Alege morcovi fermi, fara pete moi, si feliaza-i uniform ca sa fiarba in acelasi ritm cu restul legumelor. Daca ii tai prea gros, vor ramane tari cand celelalte legume sunt deja facute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> este baza aromata a ciorbei. O marunteste cat poti de marunt si soteaz-o la inceput pana se inmoaie si devine translucida &#8212; acest pas scoate dulceata din ea si construieste fundatia gustului, asa ca nu il sari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Telina<\/strong> data pe razatoarea mare aduce o aroma proaspata si usor pamantie. Radacina de telina ar trebui sa fie grea pentru marimea ei si tare la pipait; daca e usoara sau spongioasa, e veche si va avea gust fad.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeiul gras<\/strong> taiat cubulete adauga dulceata si o nota proaspata. Alege unul cu pielita lucioasa si tare, fara zbarcituri. Eu il adaug odata cu celelalte legume, ca sa-si pastreze putin din textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mazarea congelata<\/strong> e foarte practica si isi pastreaza culoarea verde vie. Nu trebuie dezghetata inainte &#8212; merge direct in oala. E unul dintre acele ingrediente care fac diferenta intre o ciorba banala si una colorata, plina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul<\/strong> pisat (sase catei) da ciorbei caracter. Pentru un gust mai bland il poti adauga odata cu legumele; daca il vrei mai pronuntat, pune-l spre final. Catelele tari, fara coltisor verde la mijloc, sunt cele mai aromate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile decojite din conserva<\/strong> (o cutie de 400g, cubulete) aduc corp si o aciditate placuta. Le adaug spre final, dupa ce legumele au fiert deja, pentru ca aciditatea lor incetineste inmuierea legumelor daca le pui prea devreme.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Agentul de acrire<\/strong> &#8212; otet de mere, bors sau zeama de varza &#8212; e cel care transforma o supa de legume intr-o ciorba adevarata. Adauga-l la final si gusta pe parcurs: e mult mai usor sa mai pui decat sa corectezi o ciorba acrita prea tare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mixul de legume deshidratate<\/strong> (un fel de vegeta naturala) este condimentul principal. Eu am folosit vegeta sanatoasa facuta in casa si va recomand sa va preparati singuri mixurile, ca sa evitati monoglutamatul de sodiu si excesul de sare din variantele comerciale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Verdeata proaspata<\/strong> &#8212; frunze de telina sau leustean si patrunjel tocat &#8212; se adauga la final. Leusteanul mai ales da ciorbei acel parfum specific de ciorba romaneasca; pune-l in farfurie, peste ciorba fierbinte, ca sa-si pastreze aroma.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu sari sotarea cepei.<\/strong> Multi arunca toate legumele odata in apa, dar cateva minute de sotat ceapa pana devine translucida construiesc baza de gust. Stii ca e gata cand ceapa s-a inmuiat si miroase dulce, nu intepator.<\/li>\n<li><strong>Adauga rosiile spre final.<\/strong> Aciditatea rosiilor intareste legumele si le face sa fiarba mai greu. De aceea lasa-le pe morcovi, telina si ardei sa fiarba 30 de minute, apoi pune rosiile si mai lasa doar 5 minute.<\/li>\n<li><strong>Acreste treptat si gusta.<\/strong> Pune otetul sau borsul putin cate putin, gustand intre adaugari. O ciorba acrita prea tare e greu de salvat, in timp ce una prea blanda se corecteaza intr-o secunda.<\/li>\n<li><strong>Verdeata se pune la final.<\/strong> Leusteanul si patrunjelul isi pierd aroma daca fierb. Adauga-le dupa ce ai oprit focul sau direct in farfurie, ca sa pastrezi parfumul proaspat.<\/li>\n<li><strong>Lasa ciorba sa se odihneasca.<\/strong> Daca ai timp, las-o acoperita 10-15 minute dupa ce ai oprit focul. E o ciorba care ierta improvizatia.<\/li>\n<li><strong>Alege acrirea dupa gust.<\/strong> Otetul de mere da o aciditate curata, borsul un gust mai pronuntat si traditional, iar zeama de varza o nota usor fermentata. Foloseste ce ai si ce iti place.<\/li>\n<li><strong>Foloseste rosii proaspete.<\/strong> In sezon, poti inlocui conserva cu rosii proaspete decojite, cubulete. Ai nevoie de cantitate ceva mai mare pentru ca rosiile proaspete lasa mai putin suc concentrat.<\/li>\n<li><strong>Inlocuieste leusteanul cu marar sau patrunjel<\/strong> daca nu ai sau nu iti place gustul lui puternic. Verdeata proaspata, oricare ar fi, ramane esentiala pentru finalul ciorbei.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ciorba de legume se pastreaza foarte bine la frigider 3-4 zile, intr-un recipient inchis. Ca multe ciorbe, gustul devine si mai bun a doua zi, dupa ce aromele s-au asezat, asa ca e perfecta de gatit din timp. O poti si congela pana la 2-3 luni; daca stii ca o congelezi, eu las verdeata proaspata deoparte si o adaug abia la reincalzire, ca sa-si pastreze culoarea si aroma. Cand o reincalzesti, fa-o la foc mic si gusta din nou acrirea &#8212; uneori mai are nevoie de o lingura de otet sau de bors.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac ciorbele de legume, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-varza\/\">ciorba de varza<\/a> sau o <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-radauteana-vegana-de-post\/\">ciorba radauteana vegana de post<\/a> pentru zilele in care vrei ceva mai consistent. Iar daca vrei o supa mai catifelata, da o sansa unei <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-legume\/\">supe crema de legume<\/a>.<\/p>\n\n\n<div id=\"recipe\"><\/div><div
