Se face cu cartofi fierti, morcovi, mazare, muraturi si masline, legate cu maioneza vegana de casa sau cumparata. Textura si gustul sunt identice cu salata boeuf clasica &#8212; acidul muraturilor, dulceata morcovilor si cremozitatea maionezei sunt aceleasi, fara niciun ingredient de origine animala. Fierberea in coaja pastreaza mai mult amidon la suprafata &#8212; cartofii decojiti fierti direct se sfarama si dau o salata moale. Lasa-i sa se raceasca complet inainte de taiere &#8212; cartofii calzi se sfarama la amestecat. Cuburi uniforme de 1-1,5 cm sunt dimensiunea ideala.<\/p><p><strong>Morcovii<\/strong> &#8212; Fierti impreuna cu cartofii sau separat, pana sunt moi dar nu fainoase. Morcovii prea fierti se sfarama si coloreaza toata salata portocaliu. Verifica la furculita &#8212; furculita trebuie sa intre usor dar morcovul sa nu se rupa singur. Racire completa obligatorie inainte de taiere.<\/p><p><strong>Maioneza vegana<\/strong> &#8212; Ingredientul critic al retetei. Maioneza vegana comerciala de calitate (Hellmann&#8217;s Vegan, Best Foods Vegan sau echivalent) da cel mai consistent rezultat. Maioneza vegana de casa din lapte de soia si ulei este si mai buna ca gust dar necesita un blender. Cantitatea de maioneza se adauga treptat &#8212; incepi cu mai putin si adaugi pana salata are consistenta cremosa dorita, nu inecata in sos.<\/p><p><strong>Muraturile<\/strong> &#8212; Castravetii murati in saramura (nu in otet) dau cel mai autentic gust. Taie-i marunt si stoarce-i usor inainte de a-i adauga &#8212; lichidul in exces dileaza maioneza si face salata apoasa. Gogosarii murati sunt o alternativa sau un complement clasic romanesc.<\/p><p><strong>Maslinele<\/strong> &#8212; Maslinele negre fara samburi, taiate rondele, adauga un element sarat si o nota amaruie care echilibreaza dulceata morcovilor. Cartofii si morcovii au timpuri de fierbere diferite &#8212; daca ii fierbi impreuna, unul dintre ei va fi prea fiert. In practica insa, daca tai morcovii mai mari decat cartofii, pot fierbe impreuna.<\/li>\n\n<li>Taie toate ingredientele la dimensiuni uniforme. Cuburi de 1-1,5 cm pentru cartofi, morcovi si muraturi. Uniformitatea da salata un aspect ingrijit si asigura ca fiecare furculita are toate ingredientele in proportii egale.<\/li>\n\n<li>Amesteca salata cu grija, nu energic. Foloseste o spatula sau o lingura lata si miscari de rasucire lente. Amestecatul viguros sfarama cartofii si transforma salata intr-un piure.<\/li>\n\n<li>Gusta si ajusteaza dupa amestecare &#8212; maioneza vegana poate fi mai putin sarata decat cea clasica. Adauga sare, un strop de otet sau zeama de lamaie dupa gust inainte de a pune la frigider.<\/li>\n\n<li>Pune la frigider cel putin 2 ore, ideal peste noapte. Racirea permite maionezei sa se integreze cu legumele si acidul muraturilor sa patrunda uniform in toata salata.<\/li><\/ul><h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2><p><strong>Cu sfecla rosie<\/strong> &#8212; Adauga sfecla rosie fiarta taiata cubulete pentru o varianta cu culoare roz-violet spectaculoasa. Sfecla se adauga la final si se amesteca rapid &#8212; coloreaza tot daca stai prea mult. Unii prefera sa o tina separat si sa o puna deasupra la servire.<\/p><p><strong>Cu mere<\/strong> &#8212; Un mar verde acrisor taiat cubulete mici adauga prospetime si o nota dulce-acida care contrasteaza cu cremozitatea maionezei. Stropeste cu zeama de lamaie imediat dupa taiere pentru a nu se oxida.<\/p><p><strong>Fara maioneza<\/strong> &#8212; Inlocuieste maioneza cu un dressing din tahini, zeama de lamaie, usturoi si apa pentru o varianta mai usoara si fara ulei rafinat. Textura e diferita dar gustul e surprinzator de bun, cu o nota orientala.<\/p><p><strong>Cu naut<\/strong> &#8212; Adauga o conserva de naut scursa si clatita pentru proteine suplimentare si textura. Nu se congeleaza &#8212; legumele fierte si maioneza nu suporta congelarea, textura se degradeaza complet la dezghetare.<\/p><p>Este unul dintre preparatele ideale pentru masa de sarbatori tocmai pentru ca se face obligatoriu cu o zi inainte. Gustul a doua zi e net superior celui proaspat facut. Pregateste-o cu 24 de ore inainte, acopera cu folie alimentara si tine la frigider pana la servire.<\/p><p>Daca faci cantitate mare pentru mai multi ostaeti, pastreaza maioneza separat si amesteca-o
