Frunzele de vita se gatesc la cuptor pana devin moi si usor acrisoare, iar umplutura ramane suculenta. Sunt complet vegane si perfecte ca aperitiv sau fel principal usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Trebuie sa recunosc ca nu ma prea omor eu dupa sarmalutele in foi de vita &#8212; mereu le-am preferat pe <a href=\"https:\/\/gourmandelle.com\/ro\/sarmale-de-post\/\">cele facute cu varza murata<\/a>. De obicei le pregatesc doar pentru prietenul meu, care e mare fan al lor, alaturi de sarmalutele vegetariene clasice. E reteta pe care o fac din dragoste pentru gusturile lui, nu neaparat pentru ale mele, si tocmai de aceea am ajuns sa o stiu foarte bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu stiu de ce, dar mereu cand mananc sarmale in foi de vita dau frunzele la o parte si mananc doar umplutura. Asta m-a invatat un lucru: la reteta asta umplutura e vedeta, asa ca pe ea o lucrez cel mai mult. Daca le culegi proaspete, alege frunze tinere, de marime medie, fara petele cafenii sau gauri de la insecte; cele prea batrane sunt aspre si tari. Daca folosesti frunze din borcan, in saramura, clateste-le bine sub jet de apa ca sa scapi de excesul de sare, altfel sarmalutele ies prea sarate. Inainte de umplut, taie codita tare de la baza fiecarei frunze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile Champignon<\/strong> sunt inima umpluturii &#8212; 800 g pentru aceasta cantitate. Cauta ciuperci ferme, cu palaria inchisa, fara pete moi sau umede; cele cu lamelele larg deschise sunt deja trecute. Sfatul meu: nu le spala sub jet de apa, ci sterge-le cu o carpa umeda, pentru ca ciupercile absorb apa ca un burete si apoi nu se mai rumenesc, ci fierb in propriul lichid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orezul<\/strong> se pune la inmuiat in apa cu o ora inainte &#8212; o cana. Inmuierea ajuta orezul brun, care e mai tare decat cel alb, sa inceapa sa se inmoaie inainte de gatire. Atentie la pasul cheie din reteta: orezul nu trebuie sa fie complet gatit cand opresti focul, pentru ca isi termina coacerea in cuptor, in interiorul frunzelor. Daca il gatesti complet de la inceput, iese sfaramat si lipicios.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si patrunjelul<\/strong> aduc prospetimea. Ceapa se toaca fin la robot, alaturi de ciuperci, si se soteaza pana se inmoaie. Patrunjelul &#8212; o jumatate de cana, maruntit &#8212; se adauga la final, dupa ce ai oprit focul, ca sa-si pastreze aroma vie si culoarea verde; daca il pui in tigaia fierbinte, se ofileste si isi pierde din parfum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; boia dulce, cimbru uscat, coriandru macinat, pudra de ghimbir, sare si piper &#8212; sunt cele care transforma o tocatura simpla intr-o umplutura cu caracter. Foile de dafin se pun in cratita, intre sarmalute, nu in umplutura, si parfumeaza apa de fierbere. <strong>Pasta de tomate<\/strong> se adauga abia in ultimele 15 minute de coacere, ca sa nu se arda si sa nu amareasca.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Soteaza ciupercile pana scade tot lichidul.<\/strong> Cand le pui in tigaie lasa multa apa; asteapta cele 10 minute pana se evapora si incep sa se rumeneasca &#8212; atunci capata gustul concentrat. Daca le opresti prea devreme, umplutura iese apoasa.<\/li>\n<li><strong>Nu indesa prea multa umplutura.<\/strong> O lingura per frunza e suficienta. Le tii la frigider, intr-un recipient inchis, 3-4 zile, si le poti servi reci sau reincalzite la cuptor cu putina apa, ca sa nu se usuce. Se preteaza si la congelat: aseaza-le intr-un singur strat, congeleaza-le, apoi muta-le intr-o punga; rezista pana la doua luni. Sunt o reteta excelenta de pregatit din timp pentru o masa cu oaspeti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca tot pregatesti pentru o masa festiva, le poti aseza pe un platou alaturi de alte <a href=\"https:\/\/gourmandelle.com\/ro\/idei-pentru-platouri-cu-aperitive-vegetariene\/\">idei pentru platouri cu aperitive vegetariene<\/a>.
