Albusurile batute spuma dau textura usoara, iar racirea la frigider minimum trei ore il intareste perfect. Simplu, elegant si gata in cateva minute de lucru efectiv.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta a fost prima mea aventura cu mousse de ciocolata si m-am aventurat departe de metodele conventionale ale cartilor de bucate, bazandu-ma in schimb pe intuitia mea. Rezultatul? Cu totul spectaculos, neted si irezistibil, fara sa am nevoie de abilitati culinare avansate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este clar ca acesta a devenit noua mea modalitate preferata de a ma rasfata cu ciocolata. Imi place pentru ca nu ascunde nimic: gustul intens de ciocolata neagra ramane in prim-plan, iar espresso-ul il adanceste fara sa transforme desertul intr-unul de cafea. Alege o ciocolata cu minimum 60-70% cacao si verifica eticheta sa fie cacao adevarat, nu inlocuitori de grasimi vegetale &#8212; diferenta de gust si de textura la topire este uriasa. Cu cat procentul de cacao e mai mare, cu atat mousse-ul e mai intens si mai putin dulce, deci ajusteaza zaharul in functie de ce ciocolata folosesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Espresso-ul<\/strong> nu transforma desertul intr-unul de cafea, ci adanceste si intensifica gustul de ciocolata &#8212; e un truc clasic de cofetarie. Foloseste espresso proaspat sau cafea tare; daca nu ai espressor, o lingura de cafea instant dizolvata in 30 ml apa fierbinte face treaba la fel de bine. Lasa-l sa se mai racoreasca putin inainte sa il adaugi peste ciocolata topita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ouale<\/strong> sunt structura intregului mousse, asa ca foloseste-le cat mai proaspete si la temperatura camerei &#8212; albusurile reci se bat mai greu in spuma. Foloseste oua de la o sursa de incredere, fiindca albusurile raman necoapte in reteta. Separa-le cu grija: chiar si o urma de galbenus in albusuri le impiedica sa se bata bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul<\/strong> este optional si depinde complet de ciocolata aleasa. Daca folosesti ciocolata cu lapte sau una mai dulce, nu mai adauga zahar deloc; daca mergi pe ciocolata neagra intensa, o lingura echilibreaza amaraciunea. Il adaugi peste albusuri in timp ce le bati, ca sa se dizolve complet si sa stabilizeze spuma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Romul si vanilia<\/strong> sunt accentele de aroma care fac mousse-ul sa para de cofetarie. Esenta de rom si extractul de vanilie merg amandoua peste albusuri si dau acea nota calda, rotunda, care completeaza ciocolata. Un praf de sare, oricat de mic, intensifica perceptia de ciocolata si echilibreaza dulceata &#8212; nu il sari.<\/p>\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Topeste ciocolata bland la bain-marie.<\/strong> Tine vasul deasupra apei calde, nu in apa, si nu lasa aburul sau picaturile de apa sa ajunga in ciocolata &#8212; altfel se va branzi si va deveni granuloasa. Stii ca e gata cand devine o crema fina si lucioasa.<\/li>\n<li><strong>Lasa ciocolata sa se racoreasca usor inainte de a adauga galbenusurile.<\/strong> Daca o incorporezi prea fierbinte peste galbenusuri, exista riscul sa le coagulezi. Amesteca repede ca sa obtii o crema neteda.<\/li>\n<li><strong>Bate albusurile pana fac varfuri ferme.<\/strong> Stii ca sunt gata cand poti intoarce bolul cu gura in jos fara sa cada. Aceasta este structura care da volum mousse-ului, deci nu te grabi.<\/li>\n<li><strong>Incorporeaza albusurile cu miscari de jos in sus.<\/strong> Foloseste o spatula si amesteca usor, prin pliere, nu prin batere &#8212; scopul este sa pastrezi aerul din spuma. Daca amesteci prea energic, mousse-ul se lasa si iese dens.<\/li>\n<li><strong>Rabdare la frigider.<\/strong> Trei ore este minimul, dar daca il lasi peste noapte textura se aseaza si mai frumos. Se pot manca si dupa o ora la rece, insa rabdarea chiar se simte in rezultat.<\/li>\n<\/ul>\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fara cafea.<\/strong> Daca nu vrei deloc espresso, il poti inlocui cu aceeasi cantitate de lapte cald (sau lapte vegetal) &#8212; pierzi adancimea de aroma, dar mousse-ul ramane neted.<\/li>\n<li><strong>Alta aroma.<\/strong> In loc de rom poti folosi coniac, lichior de portocale sau pur si simplu mai multa vanilie pentru o varianta fara alcool.<\/li>\n<li><strong>Mai putin sau mai mult dulce.<\/strong> Reteta merge si cu stevia in loc de zahar, asa cum apare in instructiuni, daca vrei sa reduci zaharul; cu ciocolata cu lapte, sari complet peste indulcitor.<\/li>\n<li><strong>Topping.<\/strong> Serveste mousse-ul cu fulgi de ciocolata, putina coaja de portocala, fructe de padure proaspete sau o lingura de frisca pentru un plus de spectaculozitate.<\/li>\n<\/ul>\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n<p class=\"wp-block-paragraph\">Mousse-ul de ciocolata se pastreaza la frigider, acoperit, pana la 2-3 zile. Pentru ca oricum are nevoie de minimum trei ore de racire, este un desert perfect de preparat in avans: il faci dimineata sau cu o zi inainte si il servesti direct din bol. Nu il recomand la congelator, fiindca textura aerata se modifica la decongelare. Scoate-l de la frigider cu cateva minute inainte de servire, ca aromele sa iasa mai bine in evidenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca te-ai indragostit de aceasta textura, foloseste mousse-ul ca strat intr-un desert mai complex: incearca-l in <a href=\"https:\/\/gourmandelle.com\/ro\/tort-cu-mousse-de-ciocolata\/\">tortul cu mousse de ciocolata<\/a> sau in <a href=\"https:\/\/gourmandelle.com\/ro\/cheesecake-cu-ciocolata-vegan\/\">cheesecake-ul cu ciocolata<\/a>.
