Gutuile crude sunt tari si acrisioare, dar la fiert capata o textura moale si o aroma dulce-florala intensa. Reteta este vegana, simpla, si gata in 40-45 de minute. Gutuile verzi sau semimaturate au o aroma mai slaba si fierb mai greu. Coaja gutuilor are un puf fin &#8212; spala-le bine sub apa curenta, frecand cu o periuta moale. Sunt tari si dificil de taiat, asa ca foloseste un cutit bine ascutit. Taie fiecare gutuie in jumatate, indeparteaza cu o lingurita miezul lemnoasa si semintele, apoi decojeste si taie cuburi. Daca nu le gatesti imediat, pune cuburile in apa rece cu suc de lamaie sa nu se oxideze si sa nu se innegreasca.<\/p><p><strong>Zaharul<\/strong> &#8212; Cantitatea se ajusteaza dupa acreala gutuilor si dupa gustul personal. Gutuile mai coapte au nevoie de mai putin zahar. Poti inlocui zaharul alb cu zahar brun sau zahar de cocos pentru un gust mai caramelizat si mai complex. Zaharul de cocos da o culoare mai inchisa desertului si o nota usor de caramel.<\/p><p><strong>Stafidele<\/strong> &#8212; Adauga dulceata naturala si textura in desert. Pune-le direct in oala &#8212; se vor hidrata si se vor umfla in lichidul din gutui. Poti folosi stafide aurii (mai blande) sau stafide negre (mai intense ca gust). Daca nu ai stafide, pot fi inlocuite cu curmale tocate sau omise complet.<\/p><p><strong>Condimentele<\/strong> &#8212; Scortisoara este esentiala pentru aroma clasica a mancarii de gutui. Vanilia (pasta de vanilie, extract sau o pastaia taiata si razuita) adauga profunzime. Coaja de lamaie rasa fin echilibreaza dulcele cu o nota citrica. La foc mare se desfac si se transforma in piure. La foc mic raman bucati intregi, moi dar ferme, cu o culoare rozalie frumoasa.<\/li>\n<li>Nu adauga apa in exces de la inceput &#8212; gutuile lasa propriul lichid la fiert. Incepe cu putina apa (2-3 linguri) si adauga mai mult doar daca simti ca se lipeste de fundul oalei.<\/li>\n<li>Adauga zaharul dupa primele 15-20 de minute de fierbere, nu de la inceput. Gutuile fierte cu zahar de la inceput raman mai tari &#8212; zaharul intareste textura fructelor. Fara zahar la inceput, se inmoaie mai rapid.<\/li>\n<li>Gutuile sunt gata cand poti trece usor o furculita prin ele si au capatat o culoare rozalie-portocalie. Cantitate: 2-3 linguri de miere la 1 kg de gutui.<\/p><p><strong>Varianta cu nuci<\/strong> &#8212; Adauga nuci grosier tocate in ultimele 5 minute de fierbere sau direct in farfurie la servire. Textura crocanta a nucilor se combina bine cu gutuile moi. Inspiratie: <a href=\"https:\/\/gourmandelle.com\/ro\/budinca-de-gutui-stafide-nuci\/\"><strong>Budinca de gutui cu stafide si nuci<\/strong><\/a>.<\/p><p><strong>Varianta cu ghimbir proaspat<\/strong> &#8212; Adauga 1 lingurita de ghimbir proaspat ras impreuna cu celelalte condimente. Da o nota usor picanta si aromata care se potriveste bine cu dulceata gutuilor.<\/p><p><strong>Gutui coapte la cuptor<\/strong> &#8212; O varianta alternativa: asaza jumatati de gutui curatate intr-o tava, presara zahar si condimente, adauga 2-3 linguri de apa in tava si coace la 180\u00b0C timp de 45-55 minute pana cand sunt moi si usor caramelizate. Gustul se imbunatateste dupa prima zi &#8212; aromele de scortisoara si vanilie patrund mai adanc in fruct. Se poate servi rece direct din frigider sau incalzita usor la foc mic cu o lingurita de apa daca siropul s-a ingrosat prea mult.<\/p><p>Se poate congela in portii, in pungi sau recipiente cu capac, pana la 3 luni. La decongelat, lasa la frigider peste noapte.
