Dupa coacere se rastoarna, asa ca merele caramelizate ajung sus, intr-un strat lucios si parfumat. Se face din ingrediente simple si e gata in sub o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Desi nu sunt un mare fan al deserturilor pe baza de faina, aceasta prajitura rasturnata cu mere este cu siguranta printre preferatele mele. Cred ca tocmai pentru ca aici faina trece pe planul doi: vedeta e stratul de mere care se inmoaie si se rumeneste deasupra, iar faina de secara aduce o nota rustica, putin mai inchisa la culoare si mai aromata decat cea alba obisnuita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O fac mai ales cand am mere care stau de cateva zile prin bucatarie si vreau ceva cald, cu scortisoara, fara sa stau o dupa-amiaza intreaga. ai nevoie de 2 mere feliate. Alege soiuri care isi pastreaza forma la coacere, cum sunt Granny Smith, Idared sau orice mar romanesc mai acrisor si ferm; cele prea facute se transforma in piure si nu mai dau stratul frumos de deasupra. Felii subtiri si uniforme, de aproximativ jumatate de centimetru, se inmoaie egal si se aseaza ordonat pe fundul formei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de secara<\/strong> &#8212; 200 g dau retetei caracterul ei rustic, cu o aroma usor acrisula si o culoare mai inchisa decat faina alba. Secara are mai putin gluten, asa ca blatul iese mai dens prin natura lui; tocmai de aceea albusurile spuma sunt esentiale ca sa il aereze. Cumpara faina cat mai proaspata si tine-o la rece, fiindca tinde sa rancezeasca mai repede decat cea alba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oua<\/strong> &#8212; cele 3 oua sunt motorul retetei. Galbenusurile dau structura si culoare, iar albusurile, batute separat spuma, sunt cele care ridica blatul. Foloseste oua la temperatura camerei: albusurile reci se bat mai greu si inglobeaza mai putin aer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zahar brun<\/strong> &#8212; 100 g se dizolva in apa inainte de a fi turnate peste albusuri. Zaharul brun aduce o nota usor caramelizata, de melasa, care merge minunat cu merele si scortisoara. Daca al tau s-a intarit in punga, sparge bulgarii inainte sa il masori, ca sa se dizolve uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> &#8212; 2 linguri inlocuiesc untul si tin blatul umed. Pentru un desert, alege un ulei mai bland, nu unul foarte intens si amarui, ca sa nu acopere aromele dulci.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara macinata<\/strong> &#8212; 3 lingurite par mult, dar exact asta face desertul de toamna. Scortisoara proaspat macinata are de departe cea mai puternica aroma; daca borcanul tau sta de un an in dulap, mareste putin cantitatea sau cumpara una noua.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bicarbonat de sodiu stins cu otet de mere<\/strong> &#8212; 1 lingurita de bicarbonat stinsa cu otet sau suc de lamaie e agentul de crestere. Reactia incepe imediat ce le combini, asa ca stinge-l si incorporeaza-l in compozitie fara intarziere, apoi baga prajitura repede la cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coaja de lamaie, extract de vanilie si rom<\/strong> &#8212; aceste arome ridica blatul de la simplu la parfumat. Coaja de lamaie aduce prospetime care echilibreaza dulceata, iar vanilia si romul dau profunzime. Rade doar partea galbena a cojii, nu si albul de dedesubt, care e amar.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-list wp-block-list\">\n<li><strong>Bate albusurile pana fac varfuri moi, nu uscate.<\/strong> Vrei o spuma stabila si lucioasa; daca o bati prea mult, devine grunjoasa si se incorporeaza greu. Stii ca e gata cand, ridicand telul, spuma face un varf care se indoaie usor la varf.<\/li>\n<li><strong>Amesteca usor, cu miscari de jos in sus.<\/strong> Dupa ce ai batut albusurile, nu mai amesteca energic, ca scoti aerul din compozitie. Adauga restul ingredientelor si incorporeaza-le bland, ca sa pastrezi volumul.<\/li>\n<li><strong>Tapeteaza forma cu hartie de copt.<\/strong> Pasul asta nu e optional la o prajitura rasturnata: fara hartie, merele si zaharul se lipesc de fund si nu mai poti intoarce prajitura intreaga.<\/li>\n<li><strong>Verifica coacerea cu o scobitoare.<\/strong> Dupa cele aproximativ 50 de minute la 180C, infige o scobitoare in centru; daca iese curata, e gata. Texturile difera putin, fiindca fiecare faina absoarbe lichidul diferit.<\/li>\n<li><strong>Fara rom.<\/strong> Daca eviti alcoolul, scoate extractul de rom si dubleaza vanilia, sau adauga putin extract de migdale pentru o nota diferita.<\/li>\n<li><strong>Alte fructe.<\/strong> Perele se comporta foarte asemanator merelor si dau o varianta mai dulce si mai catifelata. Poti combina si mere cu pere in acelasi strat.<\/li>\n<li><strong>Mai multa textura.<\/strong> Presara peste mere, inainte de a turna compozitia, cateva nuci sau migdale tocate si un praf de scortisoara in plus, pentru un strat de deasupra mai crocant.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Prajitura se pastreaza acoperita, la temperatura camerei, 1-2 zile, sau pana la 4 zile la frigider. Fiind un blat cu mere, ramane umeda; daca o tii la rece, las-o cateva minute la temperatura camerei inainte de servire ca sa isi recapete fragezimea. Poti incalzi usor o felie cateva secunde, ca aroma de scortisoara sa revina. Se congeleaza bine: infasoar-o bine si tine-o pana la o luna, apoi dezgheat-o la frigider peste noapte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac deserturile de toamna cu mere, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/prajitura-cu-ovaz-mere\/\">prajitura cu ovaz si mere<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/prajitura-umeda-cu-mere-fara-gluten\/\">prajitura umeda cu mere fara gluten<\/a>.
