What inspired you to start a food blog?
In 2011 I was diagnosed with an illness called Postural Tachycardia Syndrome, which left me bed-ridden for about a year. I tried conventional medicine for six months or so to manage it but sadly the medicine didn’t work so I turned to diet as a way of healing. I couldn’t cook though when I started eating this way though so I started the blog as a way to experiment with healthy food!
How did you discover your passion for cooking?
It just grew naturally as I began to experiment with new foods and realized that everything just tasted so incredible!
What’s your story? How did you become vegan?
The story behind eating a vegan diet is really the same as the one behind starting the blog – it was a way to cure an illness, but I loved it so much that it became a way of life!
I think it’s truly inspiring that you changed your life and took control of your illness. What do you think we can do in order to help people see the great health benefits of a clean, vegan diet and encourage them to make healthier choices?
I think it’s all about making healthy food fun and unbelievably delicious, showing that you don’t have to compromise on taste to feel amazing!
I know that you also teach healthy cooking classes. What advice would you give to someone who has a very busy work schedule, but also wants to cook more often? Any tips for cooking easy, fast, healthy recipes?
I’m all about making big batch cooking on Sundays! I love making lots of quinoa, brown rice, curries, hummus and roasted sweet potatoes and then mixing them together for speedy meals when I don’t have the time to cook. I’ll often add things like avocado, chopped tomatoes, fresh rocket, olives and tins of beans to make each meal more interested too.
You get back what you put in.
What did your friends and family say when you changed your diet? Did you inspire them to go vegan too?
They thought I was totally crazy to start with, but then they saw the difference it made to me and they embraced it. They love all the food too, which I think really helps!
What do you think is the most popular raw/vegan diet myth? How would you debunk it?
I think the biggest myth is that vegan food is boring, when it’s the absolutely opposite – veggies and delicious ripe fruit have more flavour than almost anything else!
What are your top 3 favorite recipes from your blog?
My sweet potato brownies and my raw caramel slices !

The original brownie recipe for this is great, but I've made an alternative to have cinnamon to go with the sweet potato and cayenne pepper to go with the cocoa. What do you think of my video recipe?
