Ingredients
  

  • 1 cup quinoa
  • 1 ½ cup veggie broth
  • ½ cup frozen peas
  • cup cabbage chopped
  • ½ medium carrot chopped
  • ½ cup broccoli chopped
  • 2 green onions chopped
  • 2 garlic cloves minced
  • 3 Tbsp soy sauce
  • 1 Tbsp olive oil
  • salt & pepper

Instructions
 

  • In a pan, add the olive oil and garlic.
  • Heat up together.
  • Add the carrot and cabbage, season with salt and pepper.
  • Cook for 3-5 minutes, stirring constantly.
  • Add the peas, broccoli, and quinoa.
  • Stir until the quinoa absorbs all the liquid, for about 1 minute.
  • Add the veggie broth, cover, lower the heat to low and simmer for 15 minutes.
  • Remove from heat, add the soy sauce and cover back up for another 2-3 minutes.
  • Add the green onions before serving.
