2 Tbsp olive oil 1 large onion chopped 3 clove garlic minced 2 small zucchini sliced 2 cups cannellini beans 1 large can crushed tomatoes 1 bay leaf 1 tsp black pepper ¼ tsp red pepper flakes ½ tsp salt 2 Tbsp basil 4 cups vegetable stock 2 cups of water 2 cups elbow pasta
Heat a large pot on medium heat.
Add the olive oil, onions, garlic, and zucchini and saute for about 4 minutes or until fragrant.
Add the beans, tomatoes, bay leaf, black pepper, red pepper flakes, basil, salt, stock, and water to the zucchini mix and bring to a boil.
Reduce the heat and simmer for about 15 minutes.
Add the pasta and cook uncovered until the pasta is al dente (according to pasta directions).
Serve with some additional fresh basil.
