Ingredients
  

  • ½ cup chopped walnuts
  • ½ cup chopped pistachios
  • ½ cup pumpkin seeds
  • ½ cup dried cranberries
  • ½ cup golden raisins
  • ½ cup dates pitted and chopped
  • ½ cup mix cubed dried pineapple
  • 3 Tbsp vegan butter melted
  • ½ cup sugar
  • 2 flax eggs 2 Tbsp flax meal + 4 Tbsp water
  • 2 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • tsp nutmeg
  • ¾ cup fresh orange juice
  • ½ cup cranberry juice
  • For the glaze:
  • 4 Tbsp powdered sugar
  • 1 Tbsp orange juice

Instructions
 

  • Preheat the oven to 180C
  • Brush a bundt pan with coconut oil. Set aside.
  • In a small bowl, mix the flax egg mixture and set aside.
  • In a medium bowl add the flour, baking soda, cinnamon, nutmeg and salt. Mix together.
  • In a large bowl add the orange juice, cranberry juice, cranberries, dates, raisins, pineapple, walnuts, pistachios, pumpkin seeds, vanilla extract, sugar, thickened flax seed meal mixture, melted butter and mix together.
  • Add the flour mixture to the fruit mixture and combine well.
  • Pour into the prepared bundt pan and bake for about 45 minutes.
  • Let cool.
  • Meanwhile, whisk together the powdered sugar and orange juice.
  • Once the cake has cooled, drizzle it with glaze.
