Thai Peanut Noodles

Ingredients
  

  • 200 g rice noodles
  • 1 large red bell pepper sliced into thin strips
  • 2 small cucumber sliced into thin strips
  • 1 cup broccoli cut into small florets
  • 1 large yellow onion sliced
  • ½ cup lightly salted roasted peanuts roughly chopped
  • 1 cup lightly toasted smoked tofu sliced
  • black sesame seeds for garnish
  • 1 tsp coconut oil
  • Peanut Sauce
  • cup creamy peanut butter
  • ¼ cup warm water
  • 3 Tbsp soy sauce or tamari
  • 2 Tbsp maple syrup
  • 1 Tbsp sriracha
  • 1 ½ Tbsp fresh ginger peeled and minced
  • 1 Tbsp garlic minced
  • 1 Tbsp sesame oil

Instructions
 

  • Soak the noodles in hot water according to directions listed on the package.
  • Meanwhile, prepare the peanut sauce. In a food processor, combine all sauce ingredients and blend til' smooth.
  • In a wok pan, on medium heat, add a teaspoon of coconut oil.
  • Add bell pepper, onions, broccoli, and stir-fry for about 3 minutes.
  • Add toasted tofu and noodles and mix everything.
  • Sprinkle with black sesame seeds and serve with the peanut sauce drizzled on top.
