rice noodles

large red bell pepper
sliced into thin strips

small cucumber
sliced into thin strips

broccoli
cut into small florets
1
large yellow onion
sliced
½
cup
lightly salted roasted peanuts
roughly chopped
1
cup
lightly toasted smoked tofu
sliced
black sesame seeds
for garnish

coconut oil
Peanut Sauce
⅓
cup
creamy peanut butter
¼
cup
warm water

soy sauce
or tamari

maple syrup

sriracha

fresh ginger
peeled and minced

Instructions
Soak the noodles in hot water according to directions listed on the package.
Meanwhile, prepare the peanut sauce. In a food processor, combine all sauce ingredients and blend til' smooth.
In a wok pan, on medium heat, add a teaspoon of coconut oil.
Add bell pepper, onions, broccoli, and stir-fry for about 3 minutes.
Add toasted tofu and noodles and mix everything.
Sprinkle with black sesame seeds and serve with the peanut sauce drizzled on top.
