Cream of Potato Soup with Carrots and Caraway Seeds

Ingredients
  

  • 6 potatoes peeled and cut into chunks
  • 1 onion peeled and cut into chunks
  • 2 carrots peeled and sliced
  • ½ lemon’s juice
  • ½ tsp sweet paprika
  • ¼ tsp ground white pepper
  • salt to taste
  • 1 tbsp olive oil
  • 1 tbsp caraway seeds

Instructions
 

  • Add potatoes, onion and carrots in a large pot.
  • Add water just enough to cover them.
  • Boil for 20 minutes.
  • Remove from heat and add salt, spices and lemon juice.
  • Using a vertical blender, blend all ingredients together until the soup is smooth and creamy. Add more water if needed.
  • Add caraway seeds and olive oil.
