- 6 potatoes peeled and cut into chunks
- 1 onion peeled and cut into chunks
- 2 carrots peeled and sliced
- ½ lemon’s juice
- ½ tsp sweet paprika
- ¼ tsp ground white pepper
- salt to taste
- 1 tbsp olive oil
- 1 tbsp caraway seeds
Add potatoes, onion and carrots in a large pot.
Add water just enough to cover them.
Boil for 20 minutes.
Remove from heat and add salt, spices and lemon juice.
Using a vertical blender, blend all ingredients together until the soup is smooth and creamy. Add more water if needed.
Add caraway seeds and olive oil.
