Savory Mushroom Rolls

Ingredients

  • For the dough:
  • 100g (¾ cup) flour
  • 1 tsp dry yeast
  • 80ml (⅓ cup) water
  • 2 Tbsp olive oil
  • ½ tsp sugar
  • 1 tsp salt
  • For the filling:
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, diced
  • 150g (2 cups) mushrooms, chopped
  • 90g (3 cups) spinach
  • 1 tsp balsamic vinegar
  • 1 tsp oregano
  • salt
  • pepper

Instructions

  1. Add sugar and yeast to your water.
  2. In a separate bowl, mix 1 tsp of salt with the flour then add the water and yeast.
  3. Combine well until the dough is formed. Cover and let rest in a warm place for 1,5h.
  4. Heat up 2 Tbsp of oil in a pan, add the chopped onion and garlic and cook over medium heat until translucent.
  5. Add the chopped mushrooms, season with oregano, salt, and pepper. Cook for 5-7 minutes.
  6. Add the spinach and balsamic vinegar, stir for 1 minute and remove from heat.
  7. Roll the dough into a rectangle shape, pour the filling on top and spread it evenly.
  8. Roll the dough.
  9. Cut into 6-8 pieces.
  10. Bake in a preheated oven at 180 degrees Celsius for 25-30 minutes.
  11. Halfway through the baking brush the tops with oil.
