Heat the oil in medium pot.
Add diced onion and sauté until golden.
Fill <g class="gr_ gr_70 gr-alert gr_spell gr_inline_cards gr_run_anim ContextualSpelling multiReplace" id="70" data-gr-id="70">two thirds</g> of the pot with water. (6-8 cups of water)
Add condiments: salt, pepper, dry parsley, veggie mix.
Add sliced carrots, diced celery root, red bell <g class="gr_ gr_69 gr-alert gr_gramm gr_inline_cards gr_run_anim Punctuation only-ins replaceWithoutSep" id="69" data-gr-id="69">pepper</g> and peas.
Let it boil until all veggies are tender. (about half an hour)
Add chopped tomatoes, sliced <g class="gr_ gr_74 gr-alert gr_gramm gr_inline_cards gr_run_anim Punctuation only-ins replaceWithoutSep" id="74" data-gr-id="74">garlic</g> and celery leaves.
Let it boil for another 5 minutes.
Serve with fresh parsley on top. (Unfortunately I didn’t have any…)
