Aperol Tonic

An easy, two-ingredient Aperol tonic: Aperol topped with cold tonic water over plenty of ice, with an orange slice. A lighter, drier, less sweet take on the Aperol spritz, with no prosecco.

Ingredients 

  • 2 oz Aperol about 60 ml
  • 4 oz tonic water chilled, about 120 ml, plus more to taste
  • Ice cubed, to fill the glass
  • 1 slice orange to garnish, or grapefruit

Instructions

  • Fill a large wine glass or tumbler right to the top with ice.
  • Pour the Aperol over the ice.
  • Top with cold tonic water and stir gently just once, so you keep the bubbles.
  • Garnish with a fat slice of orange (grapefruit is lovely too) and serve straight away, while it is cold and fizzy.
