Skip the sugary Christmas cookies and bake these healthy vegan banana oatmeal cookies instead. They come together with just a handful of simple ingredients and no added sugar.
In a bowl, mash the bananas with a fork, then stir in the oats, cranberries, baking soda, oat milk
and vanilla extract until well combined.
Line an oven tray with parchment paper, then lightly grease it.
Spoon about 1 tablespoon of the cookie mixture for each cookie, or 2 tablespoons if you want
them larger.
Bake for 20-30 minutes, until set and lightly golden.

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Use very ripe, spotty bananas for the best natural sweetness.
