Banana Oatmeal Cookies with Cranberries

Skip the sugary Christmas cookies and bake these healthy vegan banana oatmeal cookies instead. They come together with just a handful of simple ingredients and no added sugar.

Ingredients 

  • 3 bananas very ripe
  • 2 cups quick-cooking oats
  • ½ cup dried cranberries
  • 1 teaspoon vanilla extract
  • ¼ cup oat milk
  • ½ teaspoon baking soda
  • oil for greasing the pan

Instructions

  • Preheat the oven to 350F (175C).
  • In a bowl, mash the bananas with a fork, then stir in the oats, cranberries, baking soda, oat milk
  • and vanilla extract until well combined.
  • Line an oven tray with parchment paper, then lightly grease it.
  • Spoon about 1 tablespoon of the cookie mixture for each cookie, or 2 tablespoons if you want
  • them larger.
  • Bake for 20-30 minutes, until set and lightly golden.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Use very ripe, spotty bananas for the best natural sweetness.
