These cream cheese dip baguette cups are an easy vegetarian appetizer, made with a creamy feta and ricotta filling seasoned three ways. Ready in just 15 minutes, they are perfect for parties, brunches or a simple cheesy snack.
3baguettesI used 15cm long baguettes, but you can use longer ones too, it doesn't really matter
1cupfeta cheese
2cupsricotta cheese

Cheese Dip no. 1:
¼cupscallionschopped
1Tbspdillchopped
2pinchesturmericfor garnish
Cheese Dip no. 2:
2tspsweet paprika
2Tbspparsleychopped
Cheese Dip no. 3:
1tsppoppy seeds

Garnish:
¼carrot
¼red bell pepper
1scallion
2tspdill
Instructions
In a large bowl, mix the feta cheese with the ricotta. Mash with a fork until smooth. Add sea salt to taste.
Divide the composition into 3 separate bowls.
Add the preferred spices to each bowl and mix well (see ingredients).
Cut the baguettes diagonally (see the photos). Each cup should be approx. 5cm tall.
Stuff the baguette cups and garnish them as you please!
Notes
Divide the base into 3 bowls and season each differently for a colorful trio from one batch. Assemble the cups shortly before serving so the baguette stays crisp; keep any leftover filling covered in the fridge for up to 2 days.
