A fresh carrot ginger juice made in 10 minutes with a juicer or blender. Naturally sweet, rich in beta-carotene, with a warming kick of ginger and a squeeze of lemon
Scrub the carrots well; no need to peel. Peel the ginger.
Juicer method: run the carrots, ginger, and optional orange or apple through a juicer. Stir in the lemon juice.
Blender method: chop the carrots, blend with the ginger, optional fruit, lemon juice, and ½ cup water until smooth, then strain through a fine sieve or nut milk bag.
Taste and adjust the ginger or lemon to your liking.
Pour over ice and serve immediately.
Notes
Best served fresh. Store in a sealed jar in the fridge for up to 24 hours and stir before drinking. A few drops of oil or a slice of avocado helps absorb the beta-carotene.
