Fresh Gingery Carrot Juice

A fresh carrot ginger juice made in 10 minutes with a juicer or blender. Naturally sweet, rich in beta-carotene, with a warming kick of ginger and a squeeze of lemon

Equipment

  • 1 Juicer (or high-speed blender)
  • 1 Fine-mesh strainer or nut milk bag

Ingredients 

  • lb carrots about 8, scrubbed
  • 1-inch piece fresh ginger peeled
  • 1 orange or apple optional (for extra sweetness)
  • 1 tsp lemon juice
  • ½ cup water only if using a blender

Instructions

  • Scrub the carrots well; no need to peel. Peel the ginger.
  • Juicer method: run the carrots, ginger, and optional orange or apple through a juicer. Stir in the lemon juice.
  • Blender method: chop the carrots, blend with the ginger, optional fruit, lemon juice, and ½ cup water until smooth, then strain through a fine sieve or nut milk bag.
  • Taste and adjust the ginger or lemon to your liking.
  • Pour over ice and serve immediately.

Notes

Best served fresh. Store in a sealed jar in the fridge for up to 24 hours and stir before drinking. A few drops of oil or a slice of avocado helps absorb the beta-carotene.
