Ginger Beet Lemonade

This ginger beet lemonade is a classic lemonade with a twist: a ruby-red color from fresh beetroot, a sweet-tart lemon base, and a warming kick of ginger. It comes together in just 5 minutes.

Ingredients 

  • ½ beetroot
  • 2 lemons
  • 1 piece ginger thumb-size
  • honey or another healthy sweetener, to taste
  • water to dilute

Instructions

  • Juice the lemons.
  • Add the beetroot and ginger to your juicer and juice them too.
  • Mix the lemon juice with the beetroot and ginger juice, then add water to dilute to taste.
  • Stir in your sweetener of choice to taste and serve.

Notes

Swap the honey for maple syrup, agave, or soaked dates to make this drink fully vegan. Start with a little beet juice and add more to taste, then dilute with water until the flavor is balanced. Serve chilled over ice.
