These high protein oatmeal brownies with sour cherries are the perfect balance of sweet, tart, and chocolatey. Naturally sweetened with ripe bananas and refined sugar-free, they come together in one food processor and bake in about 35 minutes.
Preheat the oven to 180C and line a baking tray with parchment paper.
Add the bananas, cocoa powder, baking soda, eggs, whey protein powder, and oats to a food processor.
Blend until the mixture is smooth and well combined.
Pour the mixture onto the prepared baking tray and smooth it out with a spatula.
Scatter the thawed sour cherries evenly on top.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and let cool for a few minutes before slicing and serving.
Notes
The brownies are sweetened only by the bananas, so use the ripest ones you can find for the best flavour. For a fully gluten-free result, make sure to use certified gluten-free oats. Store in an airtight container in the fridge for up to 4 days.
