Golden pan-fried potatoes tossed with sweet caramelized onions and fresh green onion, this classic French Lyonnaise side dish is crispy, buttery and ready in about 45 minutes.
In a large pan, place the sliced potatoes and cover them with water. Bring the water to a boil and let the potatoes simmer for 4 minutes, then drain them well.
In the same pan, heat a tablespoon of butter and a tablespoon of oil. Once hot, add half of the par-boiled potatoes and half of the sliced onions.
Sauté until the potatoes turn golden and slightly crispy, about 5 minutes.
Add the remaining potatoes, onions, butter and oil.
Continue to cook for another 15 minutes, until the onions caramelize and the potatoes turn a beautiful golden brown.
To serve, garnish with the chopped green onion and season with salt and pepper to taste. Enjoy!
Notes
Drain the par-boiled potatoes really well before frying for the crispiest result. The green onion is a fresh garnish added right at the end. To make it vegan, swap the butter for extra olive oil or vegan butter.
