Add 1 tablespoon of taco seasoning to the grated potato, mix and transfer the potato mixture to a greased casserole dish. Press to get an even layer.
In a pan on medium heat, add the chopped onion and saute for 1-2 minutes, then add the black beans and saute for another 2-3 minutes. Add the salsa and continue to cook for another 2 minutes, stirring. Turn off the heat and set aside.
In a bowl, add eggs, milk, grated cheese, salt and pepper and the other spoon of taco seasoning. Mix well.
Incorporate the beans mixture into the egg mixture and pour everything into the casserole, over the layer of potatoes.
Put in the oven and bake for 40 minutes.
