Equipment

  • Mixing bowl
  • Spoon

Ingredients

  • 1 cup rolled oats
  • ¼ cup vanilla or chocolate plant protein powder about 1 scoop / 25 g
  • ½ cup raisins
  • ½ cup nut butter peanut, almond, or sunflower
  • ¼ cup maple syrup or honey if not vegan
  • 2 tbsp seeds sunflower, chia, or hemp
  • 1-2 tbsp plant milk if needed, to bind
  • cinnamon a pinch
  • salt a pinch

Instructions

  • In a bowl, mix the oats, protein powder, raisins, seeds, cinnamon, and salt.
  • Stir in the nut butter and maple syrup until the mixture holds together when pressed. Since protein powder dries the mix, add plant milk a teaspoon at a time if it feels crumbly.
  • If too soft to roll, chill for 15 minutes; if too dry, add a little more nut butter or milk.
  • Roll into about 16 balls, wetting your hands so the mixture does not stick.
  • Chill for at least 15 minutes to firm up, then serve.

Notes

Use certified gluten-free oats if needed. Roll in coconut or cocoa for variety. Store in the fridge up to 10 days or freeze up to 3 months.
