1 cup Jasmine rice 1 ⅓ cup water 1 avocado 1 red bell pepper 3 Tbsp sweet corn 1 cucumber vegan salmon - link to the recipes here ¼ red onion 1 green onion chopped 1 Tbsp sea kale salt
Wash and drain the rice.
Add the rice and water to a pot, bring to a boil and simmer on low heat for 10 minutes.
Remove from heat and leave covered for 10-15 minutes. Fluff the rice with a fork.
Chop or slice the veggies into bite-size pieces.
Top the rice with the vegan salmon and veggies.
Season with salt. Enjoy!
