Rinse the cucumbers and grate them, then squeeze out the excess liquid.
Mash or finely mince the garlic cloves.
Add the Greek yogurt to a medium bowl. Stir in the olive oil and lemon juice until well combined. Add the garlic, cucumber, dill, salt, and pepper, and mix everything together.
Cover and store in the fridge for at least an hour before serving.
