A rich, spoonable vegan dulce de leche made with just 5 ingredients: canned coconut milk slowly simmered with sugar and vanilla into a glossy golden caramel. It comes together in about 45 minutes and is perfect over pancakes, ice cream, or straight off the spoon.
In a medium pot, combine the coconut milk and sugar.
Heat the pot over medium heat and whisk until the sugar dissolves completely.
Add the sea salt and the vanilla extract, whisking to combine.
Whisk in the sifted tapioca starch until no lumps remain.
Increase the heat until the liquid comes to a boil, then lower the heat.
Let it simmer for 20 minutes over low heat, stirring occasionally, until thickened and golden.
Let it cool, then serve or store in the fridge.
Notes
The sauce thickens as it cools. If it sets too firm in the fridge, whisk in a little coconut milk or hot water while gently reheating. Store in an airtight jar in the fridge.
