Soft, chewy vegan almond cookies loaded with dairy-free chocolate chips. Made with almond flour and a simple flax egg, they come together in about 45 minutes for an easy plant-based treat.
Pour 3 Tbsp of water over 1 Tbsp of flaxseed meal and set aside to thicken.
In a large mixing bowl, cream together the vegan butter and brown sugar.
Add the flaxseed "egg" and vanilla extract, then mix to combine.
Add the remaining ingredients, except for the chocolate chips.
Once combined, fold in the chocolate chips.
Chill the dough in the fridge for 20 minutes.
Form the dough into balls and bake on a lined baking sheet at 180 degrees C for 15-18 minutes.
Notes
Chill the dough for 20 minutes before shaping so the cookies hold together. Let them cool completely on the baking sheet before moving, as almond-flour cookies are fragile while hot. Store in an airtight container for up to 5 days.
