Avocado Brownies

These fudgy vegan avocado brownies are rich, chocolatey and refined-sugar-free. Ready in about 35 minutes, they're the easiest and most delicious healthy dessert you can make today!

Ingredients 

For the brownies:

  • 2 Hass avocados
  • ½ cup apple puree
  • 2 Tbsp date syrup
  • ¾ cup flour use gluten-free if needed
  • ½ cup cocoa powder
  • 1 Tbsp avocado oil
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 Tbsp dark chocolate melted
  • 1 pinch salt

For the frosting:

  • 1 avocado ripe
  • 1 Tbsp date syrup
  • 2 Tbsp cocoa powder
  • 1 tsp vanilla extract

Instructions

  • For the frosting:
  • Add all frosting ingredients to a blender and blend until smooth and creamy.
  • Transfer to a bowl and place in the fridge.
  • For the brownies:
  • Heat the oven to 200°C.
  • Grease a brownie baking pan with oil and dust with cocoa powder. Set aside.
  • In a food processor, add the avocado, apple puree, date syrup, melted chocolate and vanilla extract, and pulse until smooth.
  • Transfer to a mixing bowl. Add the flour, cocoa powder, baking soda, avocado oil and salt.
  • Mix until all the ingredients are well combined.
  • Transfer to the prepared baking dish and bake for about 20 minutes, or until a toothpick comes out clean.
  • Let cool, then cover with the frosting.
  • Serve with seasonal fruits. Enjoy!

Notes

For fudgier brownies, pull them when a toothpick shows a few moist crumbs, then cool fully before frosting. Store in an airtight container in the fridge for up to 4 days.
