This creamy avocado hummus blends chickpeas, ripe avocado and tahini into an ultra-smooth, healthy-fat-rich dip. It comes together in just 10 minutes for the perfect comfort snack.
2canschickpeasrinsed and drained; I used 2x 14oz (400g) cans
½lemonjuice only
2avocadossoft, ripe
4Tbsptahini
3clovesgarlic
2Tbspolive oil
saltto taste
½tspground cumin
Instructions
Put all ingredients in your food processor.
Process on high speed for 5 minutes, until the hummus is extra-smooth.
Add a little ice-cold water to make it as smooth as you like.
Drizzle with olive oil before serving.
Notes
Best eaten the same day, when the color is brightest. To slow browning, press a piece of plastic wrap directly onto the surface or drizzle a thin layer of olive oil on top before refrigerating.
