This cowboy caviar is an explosion of Tex-Mex flavors - black beans, corn, juicy tomatoes, bell pepper and red onion tossed in a zesty apple cider and lemon dressing. It comes together in just 20 minutes as a fresh, protein-packed dip or salad.

Ingredients 

For the salad:

  • 1 green bell pepper diced
  • 1 medium red onion finely chopped
  • 1 jalapeño pepper finely chopped
  • 2 tomatoes cut into cubes
  • 1 ½ cups corn
  • 1 ½ cups black beans
  • ½ bunch parsley chopped

For the dressing:

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 1 clove garlic crushed
  • ½ teaspoon cayenne powder
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  • Add all the dressing ingredients to a large jar.
  • Close the jar with the lid and shake well to emulsify the dressing.
  • Add all the salad ingredients to a large bowl, pour the dressing over them, and mix well with a spoon.
  • Cover the bowl with a lid or foil and refrigerate for 10-40 minutes, so the flavors combine and the salad is ready to serve.
  • Serve the salad on its own, with tortilla chips or corn nachos. Top with diced avocado just before serving if you like.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days - the flavors deepen overnight. Serve as a dip with tortilla chips or as a side salad, and top with diced avocado just before serving if you like.
