In need of a filling yet refreshing summer dish? This is the BEST grilled halloumi salad - genuinely tasty, far from boring, and ready in just 15 minutes.

Instructions
Because I made two portions, I divided the quantities between 2 bowls right from the start.
Chop the salad and basil leaves and divide them between the bowls. Add half of the cherry tomatoes, sun-dried tomatoes, cucumbers, olives, seeds, and avocado to each bowl.
Drizzle half of the olive oil and lemon juice into each bowl.
Slice the halloumi cheese - I used 4 slices per portion.
Grease a pan with a little olive oil and set it over medium heat.
Sprinkle za'atar on both sides of each halloumi slice and fry them in the pan, around 2 minutes per side.
Serve the halloumi slices on top of the salad.
Notes
Choose halloumi made with vegetarian rennet if strict vegetarian sourcing matters. Assemble and dress the salad just before topping it with the warm halloumi so the leaves stay crisp. For a vegan version, swap the halloumi for grilled tofu.
