Meet the best broccoli-quinoa burger — a hearty vegan patty that's healthy, easy, and packed with plant protein. Ready in about 35 minutes and perfect for lunch.
300gbroccolifrozen broccoli works too, thawed before using

a fewTbspfresh parsleychopped

1Tbsppsyllium husks or ground flaxseedalternatively you can use 1 big egg, beaten

For the burger:
4burger buns
1tomatosliced
1avocadoripe
2-3pickles
salad mix
vegan mayonnaise1 Tbsp per burger
vegan green pesto1 Tbsp per burger
Instructions
Make the patties:
Add the boiled quinoa and broccoli to a food processor and blend until you get a paste. The paste doesn't have to be creamy, you just need to combine the two ingredients. Transfer the mixture to a bowl and mix with the rest of the patty ingredients.
TIP: Leave the bowl in the fridge for 30 minutes if you want to shape the patties more easily.
Heat some oil in a large, non-stick pan over medium heat. Add the patties one by one.
Lightly fry them on both sides, then leave them to drain on a plate lined with a paper towel.
Assemble the burgers:
Spread the vegan mayonnaise and pesto on each burger bun.
Add 1 patty, 2-3 tomato slices, pickles, salad leaves, and 1/4 avocado (mashed) to each burger.

Notes
Chill the mixture for about 30 minutes before shaping so the patties hold together while frying. Store leftover patties in an airtight container in the fridge for up to 3 days.
