A healthy, guilt-free alternative to popcorn: cauliflower florets roasted until crisp and coated in a cheesy, nutty seasoning of parmesan, nutritional yeast, and sesame. It comes together with just a handful of ingredients for a snack that is as satisfying as it is wholesome.
1cupparmesangrated (use vegan cheese for a fully vegan version)
2tablespoonsnutritional yeast flakes
1teaspoonsalt
1teaspoonblack pepper
Instructions
Heat the oven to 200 C (392 F).
Line a baking tray with baking paper.
In a food processor, add all the ingredients for the seasoning and process until you get a powdery texture.
In a bowl, put the cauliflower florets and olive oil. Toss to coat.
Add the seasoning powder.
Mix so that all the cauliflower pieces are coated with a layer of seasoning.
Transfer the cauliflower to the prepared tray and arrange in a single layer.
Bake in the oven for 30 minutes.
Serve the cauliflower popcorn warm, with extra cheese or nutritional yeast flakes on top.
Notes
Serve warm, straight from the oven, when the coating is at its crispest. Store leftovers in an airtight container and reheat in the oven for a few minutes to re-crisp. For a fully vegan version, swap the parmesan for vegan cheese.
