Warm whole-grain baguette partially sliced and stuffed with feta, fresh parsley, oregano and mashed garlic, then oven-baked until melty. A quick Mediterranean-inspired appetizer or snack that comes together in about 35 minutes.
Take a piece of parchment paper large enough to wrap the bread and soak it in water. Crumple it, then wring it out. It just needs to be damp.
Place the bread on the wet parchment paper.
Add the parsley, oregano, mashed garlic and olive oil to a bowl and mix well.
Partially slice the bread, cutting most of the way down but not all the way through.
Brush the bread with the herb and garlic paste, then tuck the cheese between the slices.
Wrap the bread in the wet parchment paper and bake for 20 minutes.
After 20 minutes, partially unwrap it and leave it in the oven for 5-7 more minutes.
Serve this cheesy stuffed bread steaming hot!
Notes
Slightly stale, day-old bread holds the filling better than ultra-fresh. Block feta packed in brine melts more creamily than pre-crumbled. For a vegan version, swap the feta for a plant-based cheese.
